Steamed Vegetables and Grilled Tilapia

To prepare a delicious and healthy meal, we start by cleaning, washing, and cutting the vegetables into as uniform pieces as possible. This way, they will cook evenly and have a pleasant texture. We place the vegetables in a steamer or in a sieve placed over a pot of boiling water. It is important that the water does not touch the vegetables, so we ensure that the sieve is positioned correctly. We cover with aluminum foil or a lid, if possible, and let the vegetables steam for 7-8 minutes. This cooking method preserves the nutrients and natural flavor of the vegetables, making them healthier and more appetizing. Meanwhile, we take care of preparing the sauce. If we do not have a ready-made sauce, we will create a delicious and aromatic one. In a saucepan, we bring pineapple juice, sugar, and vinegar to a boil. We boil the mixture over high heat, stirring constantly, until the sugar completely dissolves. Once the sugar has melted, we remove the saucepan from the heat and add the cornstarch mixture with water. It is essential to stir vigorously to avoid lumps forming. We put the sauce back on the heat, stirring continuously until we achieve a thicker consistency. Finally, we taste the sauce and adjust the flavors by adding salt, sugar, or vinegar, according to our preferences. After the vegetables are steamed, we transfer them to a dish and add a few tablespoons of sweet and sour sauce on top. We gently stir to avoid crushing the vegetables, wanting to keep each piece intact. We transfer the remaining sauce to a bottle and keep it in the fridge for future use. If we opt for a store-bought sauce, we add two teaspoons (or even one) and dilute with water until we achieve a more liquid consistency. Steamed vegetables are the perfect side dish for a lean fish, grilled. On this day, we chose tilapia as the main fish. We washed the fish fillets and patted them dry with a paper towel. Then, we salted and peppered the fillets, sprinkling a little dried dill for extra flavor. We placed them on the hot grill, drizzling a little lemon juice to enhance the taste. We grilled them for 2-3 minutes on each side until they developed a golden and appetizing crust. In the end, we served the tilapia alongside the steamed vegetable side, and the combination of the delicate textures of the vegetables and the savory flavors of the fish was truly delicious. This meal is not only healthy but also full of colors and flavors, making it perfect for any occasion.
