Potato and zucchini stew in the multicooker

Potato and zucchini stew in the multicooker, with the vegetables cooked for 50 minutes on the Stew program. The potatoes soften in the tomato sauce, while the carrot and peppers stay in distinct pieces; the dill goes in at the end. I cut the potatoes into roughly equal-sized cubes so they soften evenly. Prep: 20 minutes. Cooking: 60 minutes. Total time: 80 minutes. Serves: 4. Approximately 235 kcal and 7 g protein per serving.
Ingredients
- 15 ml oil
- 5 ml water
- 1 medium onion (150 g)
- 2 medium carrots (150 g)
- 1 red pepper (150 g)
- 1 green pepper (150 g)
- 1 garlic clove (3 g)
- 250 ml water
- 4 medium potatoes (600 g)
- 3 medium zucchini (600 g)
- 1 teaspoon salt
- 3 medium tomatoes (360 g)
- 10 g fresh dill
Preparation
1. Peel the potatoes and carrots. Cut the potatoes and zucchini into cubes, the carrots into thin rounds, the onion finely and the peppers into small dice. Chop the garlic and dill. Blend the tomatoes until smooth. 2. Add 15 ml of oil and 5 ml of water to the multicooker bowl, then add the onion. Select Fry and cook for 5 minutes, until softened and starting to brown. 3. Add the carrots, peppers and garlic. Cook for another 5 minutes on Fry, until the vegetables have softened slightly. 4. Pour in 250 ml of water and select Stew for 50 minutes. After 10 minutes, add the potatoes and zucchini. 5. After another 30 minutes, add 1 teaspoon of salt and the blended tomatoes. Let the program run for the remaining 10 minutes, then add the chopped dill.
Notes
Keep in a sealed container in the fridge for up to 3 days. Choose small, firm zucchini; with larger ones, you can scoop out the seedy center before cutting. If the tomatoes are watery, leave the lid open and cook on Fry for another 5 minutes, until the sauce has reduced. When I double the quantities, I start the multicooker a little before mealtime, since the larger amount takes longer to heat up. I serve it with bread for the sauce.
Frequently asked questions
Can I make it with meat too?
Yes. Cut 400 g of boneless chicken thighs into pieces about 3 cm across and brown them for 8 minutes on Fry before adding the onion.
Which potatoes should I use so they hold their shape?
Waxy potatoes stay more intact; if you have floury potatoes, cut them into pieces about 3 cm across.
Can I replace the green pepper?
Yes, use two red peppers in total and keep the same amount of pepper.
Can I use yellow zucchini too?
Yes, replace the green zucchini gram for gram and leave the skin on if it is thin.
