Soups - Romanian country-style pork ciorbă with vegetables by Larisa N. - Recipia

Romanian country-style pork ciorbă with vegetables stays clear if you skim off the foam as it appears. The root vegetables, potatoes, yellow beans and tomatoes go in one after another, and fresh lovage is added at the end to a broth full of hearty pieces. I use lean pork leg with little sinew and cut it into spoon-sized cubes. Prep: 25 minutes. Cook: 58 minutes. Total time: 83 minutes. Serves: 4. Approximately 350 kcal and 23 g protein per serving.

Ingredients

  • 300 g lean pork leg
  • 2000 ml water
  • 15 ml oil
  • 1 medium onion (150 g)
  • 1 bell pepper (150 g)
  • 3 medium carrots (240 g)
  • 1 parsley root (100 g)
  • 1 celeriac root (200 g)
  • 300 g yellow beans
  • 3 medium potatoes (450 g)
  • 1 kohlrabi (250 g)
  • 2 medium tomatoes (240 g)
  • 1 teaspoon salt (or 1 teaspoon Delikat)
  • 15 g fresh lovage

Preparation

1. Take 25 minutes to prepare the vegetables: peel the onion, carrots, pepper, parsley root, celeriac, kohlrabi and potatoes. Dice them; peel and chop the tomatoes, and cut the beans into pieces. 2. Heat 15 ml of oil in a frying pan and sauté the onion, pepper, carrots, parsley root and celeriac for 8 minutes, until softened. 3. Pat the meat dry with paper towels and cut it into cubes. Put it in a pot with 2000 ml of water, bring to a boil, then simmer for 20 minutes. Skim off the foam a few times; the broth will start to clear. 4. Add the sautéed vegetables and the yellow beans to the pot. Boil for 15 minutes, until the beans are almost tender. 5. Add the potatoes, kohlrabi and tomatoes. Boil for another 15 minutes, until the vegetables are tender. Season with 1 teaspoon of salt or 1 teaspoon of Delikat and add the chopped lovage.

Notes

Even-sized cubes of meat cook more evenly; if the pork leg is tougher, simmer it for a few extra minutes before adding the potatoes. If the broth reduces too much, top it up with a little hot water at a time. You can replace the yellow beans with 300 g of green beans, cut into pieces. Serve with plain bread, without adding anything else to the table. The soup keeps for up to 3 days in a sealed container in the fridge. If you make it ahead, keep the chopped lovage separate and add it to the pot at the end of reheating.

Frequently asked questions

Can I use pork shoulder instead of pork leg?

Yes, use 300 g of boneless pork shoulder, cut into cubes; it may need another 10 minutes of simmering before you add the vegetables.

What can I use instead of lovage?

Chopped fresh parsley can replace it. Use 15 g; the flavour will be different, but it goes well with the broth.

What should I do if I’ve added too much salt?

Add 250 ml of hot water and let it boil for another 2 minutes. If there’s too much broth, remove a ladleful.

Can I use parsnip instead of parsley root?

Yes, replace the parsley root with 100 g of parsnip. It will give the soup a sweeter note.
