Soups - Ciorbă de cartofi cu smântână, Romanian potato soup with sour cream by Valentina K. - Recipia

Ciorbă de cartofi cu smântână, a Romanian potato soup with sour cream, is best made by adding the potatoes when the other vegetables are almost cooked, so the pieces stay intact. Carrot, parsley root and celeriac give it a vegetable-rich flavor, while sour cream makes the broth white and creamy. I like to cut the potatoes into larger cubes, so I can find them easily in the spoon. Preparation: 25 minutes. Cooking: 42 minutes. Total time: 67 minutes. Serves: 6. Approximately 380 kcal and 8 g protein per serving.

Ingredients

  • 4-5 medium potatoes (800 g)
  • 2 medium carrots (160 g)
  • 2 medium parsley roots (150 g)
  • 1 small celeriac (250 g)
  • 2300 ml water
  • 2 medium onions (300 g)
  • 30 ml oil
  • 3 medium tomatoes (450 g)
  • 3-4 garlic cloves
  • 500 ml thick market-bought sour cream with at least 20% fat
  • 1 teaspoon salt
  • 1 teaspoon Vegeta
  • 1/2 teaspoon ground pepper
  • 15 g dill
  • 15 g parsley
  • 15 g lovage

Preparation

1. Peel and wash the carrots, parsley roots and celeriac. Cut the carrots and parsley roots into rounds or half-moons, put them in a 4-liter pot with 2000 ml water and boil for 15 minutes, until almost completely tender. 2. Chop the onion. Heat 30 ml oil in a frying pan and cook the onion for 8 minutes, until softened. Remove the seeds from the tomatoes, chop them, add them to the pan and cook for another 4 minutes over low heat. 3. Peel the potatoes, cut them into cubes and add them to the pot, along with the onion and tomatoes from the pan, including the oil, and the garlic cut into thin slices. Boil for 10 minutes, until the potatoes are almost tender and the soup has come to a boil 2-3 times. Take the sour cream out of the fridge 15 minutes beforehand, then mix it with 300 ml water and a few spoonfuls of hot broth. 4. Pour the thinned sour cream into the pot and simmer for 5 minutes, without letting it boil vigorously. Add the salt, Vegeta, pepper, and chopped dill, parsley and lovage; the potatoes should be tender.

Notes

Keep the soup in a covered container in the fridge for up to 3 days; when reheating, heat only the portion you need and let it get hot without boiling vigorously. When my children were little and didn't drink much milk, I added more dairy to their food; I've been making this little soup often ever since, and I leave the garlic slices in the broth, although I take them out of soups after boiling so they don't cloud them. Waxy potatoes hold their shape better, while floury ones thicken the broth; if they're small, check them earlier, as they soften quickly. Thick sour cream from the market, sold by independent vendors, mixes more easily than very runny sour cream that looks like yogurt. If you have spring onions, use them instead of the regular ones and keep the chopped green tops too. If the broth has thickened as it cooled, thin it with a little hot water when reheating. Serve it with fresh bread. Contains dairy.

Frequently asked questions

Why might the sour cream curdle?

First mix it with 3 tablespoons of hot broth, then add it to the pot and keep the soup over low heat without letting it boil vigorously.

How much longer should I cook the potatoes if they're still firm?

Cook them for another 5 minutes over low heat and check them with a fork; large pieces may need a little more time.

Can I replace the parsley roots?

Use 150 g parsnip instead of the two parsley roots, cut into rounds and cooked with the carrot and celeriac.
