Ciorbă de cartofi noi cu hrean

Ciorbă de cartofi noi cu hrean, a Romanian sour soup with new potatoes and horseradish, simmers with smoked pork ribs and vegetables. Add the horseradish in vinegar to taste, either to the pot or straight to your bowl. I started out thinking of Saxon ciorbă and ended up with a looser version, where everyone can adjust the horseradish to their liking. I go for small potatoes, all about the same size. Prep: 20 minutes. Cook: 40 minutes. Total time: 60 minutes. Serves: 6. About 290 kcal and 13 g protein per serving.
Ingredients
- 1000 ml water
- 500 g smoked pork ribs
- 2000 ml water
- 2 carrots
- 1 teaspoon crumbled dried thyme
- 1 dried dill stalk
- 1 tablespoon black peppercorns
- 1 medium onion (150 g)
- 1 kg new potatoes
- 2 tablespoons chopped roasted gogosari peppers
- 2 celery stalks
- 2 green garlic stalks
- 3 tablespoons horseradish in vinegar
- 15 g fresh parsley
- 1 teaspoon salt (optional)
- 200 g sana or sour cream (optional)
- 20 g green onions
- 1 chili pepper
Preparation
1. Peel and wash the vegetables. Dice the potatoes and keep them in cold water; slice the carrots and celery, then cut the green garlic into rounds and chop the parsley. 2. Put the smoked pork ribs in 1000 ml boiling water and boil for 10 minutes. Discard the water. 3. Pour 2000 ml water into a pot. When it starts to boil, add the ribs, carrots, thyme, dried dill stalk, peppercorns and whole onion. Simmer over medium heat for 15 minutes, until the carrots are almost tender. 4. Drain the potatoes and rinse them once more. Add them to the pot along with the chopped roasted gogosari peppers, celery and green garlic. Boil for 15 minutes, until the potatoes are tender. 5. Add the horseradish in vinegar and chopped parsley. Taste and add salt only if needed. 6. Serve the soup with sana or sour cream, green onions and chili pepper.
Notes
Very small new potatoes can be halved; larger ones need to be cut into even pieces, or some will fall apart before the rest are tender. Homemade smoked ribs can vary in saltiness, so adjust the salt only after cooking. If you want a sharper horseradish flavor, add it straight to the bowl, not the pot. Sana and sour cream are optional and contain dairy. The soup keeps in the fridge for up to 3 days and should be reheated only until hot. Serve with green onions and chili pepper.
Frequently asked questions
Can I use regular potatoes instead of new potatoes?
Yes. Cut them into roughly 1.5 cm cubes and start checking them after 12 minutes of simmering.
How much horseradish should I add to each bowl?
Start with 1 teaspoon per person and add more if you want a stronger flavor.
What should I do if the soup is too salty?
Add 150 ml hot water and taste again before adding any more salt.
Can I replace the dried dill with fresh dill?
Yes, use 1 tablespoon chopped fresh dill and add it along with the parsley.
Can I use another kind of smoked meat instead of the ribs?
You can use 400 g smoked pork neck; cut it into spoon-size pieces before boiling.
