Ciorbă, Romanian potato soup with semolina dumplings

Soups - Ciorbă, Romanian potato soup with semolina dumplings by Cleopatra L. - Recipia

Ciorbă, Romanian potato soup with semolina dumplings, has spoonfuls of semolina mixture that cook right in the broth and float to the top when they’re done. The potatoes and other vegetables sit in a tangy broth made with borș, a fermented bran liquid, and tomatoes, while the dumplings make it more filling than an ordinary vegetable soup. I cut the potatoes into roughly two-centimeter cubes, big enough to feel in every spoonful. Prep: 20 minutes. Cook: 28 minutes. Total time: 48 minutes. Serves: 6. About 240 kcal and 7 g protein per serving.

Ingredients

  • 2000 ml water
  • 2 medium potatoes (400 g)
  • 1 medium yellow onion (150 g)
  • 2 spring onions (30 g)
  • 1 red bell pepper (150 g)
  • 1 green bell pepper (150 g)
  • 1 parsnip root (150 g)
  • 1 piece of celeriac (150 g)
  • 2 medium carrots (160 g)
  • 1 small zucchini (200 g)
  • 1 sprig dried thyme
  • 1 teaspoon salt
  • 2 tablespoons oil
  • 1000 ml borș de putină
  • 100 ml tomato juice
  • 1 large egg
  • 100 g semolina
  • 15 g fresh parsley
  • 15 g fresh lovage

Preparation

1. Peel the potatoes, onion, carrots, parsnip and celeriac. Cut the vegetables, bell peppers and zucchini into pieces, and slice the spring onions into rounds. Mix the large egg with the semolina until smooth. 2. Bring 2000 ml of water to a boil. Add all the vegetables and the sprig of dried thyme, and boil for 20 minutes, until the potatoes are tender. 3. Add 1 teaspoon of salt and 2 tablespoons of oil. Pour in 1000 ml of borș de putină and 100 ml of tomato juice, then let the soup boil for 2 minutes. 4. Dip a teaspoon into the soup and use it to scoop up small portions of the egg and semolina mixture. Drop them into the pot and boil for 6 minutes, until the dumplings rise to the surface. 5. Turn off the heat and sprinkle over the finely chopped parsley and lovage.

Notes

For a milder tang, replace 500 ml of the borș with 500 ml of water; semolina contains gluten, and the dumplings contain egg. Red-skinned potatoes hold their shape better, while floury ones break down and thicken the broth. If the carrots are thick and firm, cut them thinner than the zucchini, which softens quickly. It has the feel of an ordinary vegetable soup, but the semolina dumplings make it more filling. Keep leftovers in the fridge for up to 3 days. Serve with bread, good for dipping in the broth.

Frequently asked questions

Why do the dumplings fall apart in the soup?

Keep the soup at a gentle boil after adding them; a vigorous boil can break them up.

Can I replace the tomato juice with tomato paste?

Yes. Mix 1 tablespoon of tomato paste with 100 ml of water and pour the mixture into the pot.

Can I use fresh thyme instead of dried?

Yes, use 1 sprig of fresh thyme instead of the dried one and remove it from the pot after cooking.

Can I use frozen zucchini?

Yes, add 200 g straight from the freezer during the last 8 minutes of cooking; it will be softer than fresh zucchini.
