Vegan lentil and vegetable stew

Vegan lentil and vegetable stew is cooked in one pot, and the red lentils soften quickly and thicken the sauce. It’s served hot, usually for lunch; the onion, peppers, root vegetables and potato give it body, while the curry, paprika and coriander stay in the background, with the sauce reduced until it clings to a spoon. I cut the potato small so there’s a piece in every spoonful. Prep time: 20 minutes. Cook time: 34 minutes. Total time: 54 minutes. Servings: 4. About 340 kcal and 15 g of protein per serving.
Ingredients
- 1 red onion (150 g)
- 1 white onion (150 g)
- 2 garlic cloves
- 30 ml olive oil
- 2 bell peppers (300 g)
- 1 medium carrot (80 g)
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 medium parsley root (100 g)
- 1 medium potato (150 g)
- 1000 ml boiling water or vegetable broth
- 30 ml tomato paste (optional)
- 200 g red lentils
- 15 g parsley
Preparation
1. Chop the red and white onions. Crush the garlic with the flat of a knife, dice the peppers, grate the parsley root on the coarse side of a grater and the carrot on the fine side, then cut the potato into roughly 1 cm cubes. 2. Heat the olive oil in a pot and sauté the onions and garlic for 4 minutes, stirring. Add the peppers and carrot, then the curry, paprika, coriander, salt and pepper; sauté for another 5 minutes, until the vegetables soften. 3. Add the parsley root and potato to the pot. Pour in 1000 ml boiling water or vegetable broth, add the tomato paste if using, and simmer for 12 minutes over medium heat. 4. Rinse the red lentils under cold water and add them to the pot. Simmer for another 10 minutes, until the lentils and potato are tender. 5. Chop the parsley and stir it in. Let the stew reduce for 3 minutes, uncovered, until the sauce thickens.
Notes
Peeled red lentils break down as they cook and help thicken the sauce; whole ones stay firmer. Potatoes cut into pieces larger than 2 cm may need a few extra minutes, so check them before adding the lentils. If the vegetable broth is salty, use less salt at first and adjust the seasoning at the end. The liquid can seem thin while it’s hot, but the lentils will thicken it more as the stew cools. Serve with fresh or toasted bread to mop up the sauce on the plate. Store in a covered container in the fridge for up to 3 days. Stir often when reheating, since the lentils can stick to the bottom of the pot. If you don’t have coriander, you can replace it with the same amount of ground cumin.
Frequently asked questions
Can I use green lentils instead of red?
Yes, use 200 g and simmer for 25-30 minutes after adding them; the lentils will stay more intact.
Why did the lentils turn to mush?
Peeled red lentils break down quickly; start checking them after 8 minutes of cooking and turn off the heat while they still hold their shape a little.
Can I use sweet potato instead of regular potato?
Yes, use 150 g cut into small cubes and check it after 15 minutes of cooking, since it softens faster.
