I started making these potatoes after seeing Andreea Caroline's recipe and I've made them quite a few times since. They don't require sophisticated ingredients and go well with almost any meal. When I feel like something simple and quick for a side dish or even as a snack, I make them without a second thought. The inside stays soft, while the crust turns a nice golden brown that really shows on the plate. Peel the potatoes, then wash them well. Cut each potato into four. If they are smaller, leave them halved or cut into thirds. 2. Place the cut potatoes in a pot with cold water and add salt. We clean the potatoes and wash them well. We cut them into quarters and put them to boil in salted water until a fork goes in (but not too mushy). We drain them, then fry them in hot oil until they turn a golden brown. They are delicious, soft inside and crispy outside. You can serve them as a side dish, but also plain. Season with potato fry spices, they are really good. Serve with horseradish paste.
