They will add freshness and flavor, so we do not neglect them. We continue with the leek, which will bring an extra flavor. We cut the leek into thin rings, making sure to use only the white part and a small part of the green, which is less fibrous. Then we take care of the smoked mackerel fillet, an essential ingredient that will turn the salad into a tasty dish. We cut the fillet into larger pieces, making sure to remove any fine bones to avoid unpleasant surprises when serving. Once all the ingredients are prepared, it is time to mix them. In a large bowl, we combine the cooled potato cubes, pickles, leek rings, and mackerel pieces. We add 3-4 tablespoons of mayonnaise, which will bind all the ingredients and give the salad a creamy texture. We mix everything with a spatula, being careful not to crush the potatoes to maintain a good consistency. Finally, we season the salad with salt and pepper to taste, keeping in mind that each person has different preferences regarding the intensity of flavors. After mixing well, we cover the bowl with plastic wrap and let the salad chill in the fridge for a few hours, preferably overnight. This resting time allows the flavors to blend and become much more intense. When you are ready to serve the salad, you can arrange it nicely on plates or keep it in the bowl in which it was prepared, decorated with a few fresh parsley leaves for a vibrant look.
