Mediterranean Cauliflower with Tomatoes and Olives

To prepare this delicious baked cauliflower recipe, we start by carefully cleaning and washing the cauliflower. It is essential to remove the leaves and stem, leaving only the florets intact. Once the cauliflower is cleaned, we will steam it, a process that allows for the preservation of nutrients and its natural flavor. When the cauliflower is about half cooked, we take it out of the pot and place it in an oven-safe dish. If we do not have a steaming basket, we can use a regular pot. In this case, we add water only up to halfway of the cauliflower, cover with a lid, and let it boil, ensuring that the base and stem are in the water, while the tips of the florets steam. While the cauliflower is boiling, we prepare the sauce. In another pot, we heat the oil and add a few garlic cloves, finely chopped or left whole, depending on preference. Then, we add fresh tomato pulp and chopped sun-dried tomatoes. If you want a more intense flavor, feel free to add a few capers, which will bring an extra taste. At this moment, it is important to add a small amount of salt, being careful with the salt content from the capers, as even the desalted ones can remain salty. We let the sauce simmer gently, stirring occasionally, to allow the flavors to blend. When the cauliflower is half cooked, we place it in an oven dish, preferably a taller one, and pour the tomato sauce with olives over it, ensuring that we cover each floret well. We place the dish in the preheated oven and let it bake at high heat for 15-20 minutes, until the cauliflower becomes golden and crispy on the outside. Finally, we retrieve the garlic cloves from the sauce and sprinkle a bit of chopped fresh parsley and freshly ground pepper on top for a fresh and aromatic taste. This dish is delicious served alongside fresh bread, brushed with a little olive oil and toasted in the oven until crispy. This combination of textures and flavors will transform a simple cauliflower into a dish worthy of a feast. Enjoy your meal!
