Roasted Pepper Salad with Garlic

To prepare a delicious kapia pepper salad, start by roasting the peppers over the stove flame. Place them on the hot plate and rotate them periodically so they roast evenly. When the skin turns black and begins to peel, remove them and place them in a bowl. It is recommended to sprinkle coarse salt over the hot peppers, then cover the bowl with a lid or plastic wrap. This step is essential as the salt will help release moisture from the peppers, and the steam will facilitate the removal of the burnt skin. Wait about 10 minutes for the peppers to soften. After they have steamed, take the peppers and peel off the burnt skin under a stream of cold water, making sure to remove any traces of skin. Ensure that the peppers are clean and remain whole. At this stage, you can prepare your flavorful dressing. Peel a few garlic cloves, rinse them under water, and then crush them well in a mortar or with a garlic press. Add a teaspoon of olive oil and a little salt, mixing with a teaspoon until you achieve a smooth paste, similar to mayonnaise. This mixture will add an intense flavor to your salad. Meanwhile, wash the fresh basil leaves, enjoying their refreshing aroma, and chop them finely. Add the chopped basil to the garlic paste and mix well so that the flavors combine perfectly. Now that all components are prepared, it’s time to assemble the salad. Place the roasted peppers in a large bowl, add a tablespoon of balsamic vinegar and a teaspoon of olive oil, adjusting the taste with a little more salt, as desired. In the center of the peppers, place the garlic and basil mixture, allowing it to express all its flavors. To finish, garnish the salad with two sprigs of fresh basil, which will not only add a pleasant appearance but will also enhance the flavor even more. This kapia pepper salad is not only an excellent accompaniment to various dishes but also a delicious snack, full of vitamins and color, perfect for any occasion. Enjoy it with pleasure!
