Cacik (yogurt and cucumber sauce)

Cold water thins Cacik, a yogurt and cucumber sauce, until it’s loose enough to eat with a spoon. Cucumbers, garlic, mint and dill are mixed into yogurt, and the sauce is served cold. I choose cucumbers with firm flesh so the little cubes stay whole in the sauce. Prep: 15 minutes. Cook: 0 minutes. Rest: 30 minutes. Total: 45 minutes. Serves: 4. About 150 kcal and 4 g protein per serving.
Ingredients
- 400 g plain yogurt
- 200 ml cold water
- 3 medium cucumbers (600 g)
- 3 garlic cloves
- 5 g fresh mint
- 1 teaspoon dried mint
- 5 g dill
- 2 tablespoons olive oil
- 1 teaspoon salt
Preparation
1. Put the yogurt in a bowl and whisk it. Pour in the cold water and stir until smooth. 2. Peel the cucumbers and cut them into small cubes. Crush the garlic and chop the fresh mint and dill. 3. Stir the cucumbers, garlic, fresh and dried mint, dill, olive oil and salt into the yogurt. Cover the bowl and refrigerate the sauce for 30 minutes.
Notes
You can leave out the olive oil, and replace the cucumbers with finely chopped lettuce or purslane; the sauce contains dairy. For firm cubes, choose cucumbers with firm flesh; very large ones have more developed seeds and can release more liquid. If they’re bitter, peel them more deeply and taste the end by the stem before cutting them all. After chilling, I adjust the salt when the sauce tastes only lightly salted. At the end, the sauce runs slowly off the spoon. Serve it alongside grilled or roasted meat. You can make it before you start on the meat, so it has time to chill. It keeps for up to 3 days in a covered container in the refrigerator; stir it before serving if liquid has collected on top. Dried mint can be used on its own, but its flavor is more concentrated than fresh mint.
Frequently asked questions
Can I use Greek yogurt?
Yes. For 400 g Greek yogurt, start with 100 ml water and add 15 ml at a time until the sauce stirs easily.
What should I do if the sauce is too watery?
Leave it in a fine-mesh sieve for 5 minutes, then stir it again. Cucumbers can release liquid into the yogurt while it chills.
Can I grate the cucumbers instead of cutting them into cubes?
Yes, grate them on the coarse side of a grater and squeeze them gently before mixing them with the yogurt, so they don’t thin the sauce.
