To prepare a delicious bean paste with onion and tomato sauce, we start by carefully selecting the beans. Choosing quality beans is essential for obtaining a tasty and hearty dish. After selecting the desired beans, we wash them well under a stream of cold water to remove impurities. Then, we put them to boil in clean water, letting them simmer for a few minutes. This step helps to eliminate certain unwanted substances and speeds up the cooking process. After a few boils, we drain the water and put the beans back to boil, this time in fresh water. It is important to use cold water, as this will contribute to even boiling. At this stage, we add a finely chopped onion, a carrot, and a grated parsnip. These vegetables not only provide flavor but also an extra boost of nutrients, turning the dish into a true feast for the senses. When the beans are almost ready, we add vegetable concentrate, which will enhance the flavor of the dish. It is important to monitor the consistency of the beans, and if there is too much liquid, we drain it gently. Then, we transfer the beans to a blender and blend them until we obtain a smooth and creamy paste. Finally, we adjust the taste with salt if necessary, and add garlic to preference – I opted for garlic powder, but freshly grated garlic offers an even more intense flavor. Separately, we take care of the delicious sauce that will accompany the bean paste. In a pan, we heat a little oil and add the three julienne-cut onions. We sauté them over medium heat, stirring occasionally, until they become golden and soften well. Then, we add the tomato paste, stirring to combine the flavors. Salt and pepper the sauce to taste, being careful not to overdo it, to allow the natural flavors to shine through. Finally, we serve the bean paste in a bowl, generously covered with the onion and tomato sauce. This dish is perfect both warm and cold, making it ideal for a lunch or a light dinner.
