Yellow bean salad with chicken bologna and cherry tomatoes

Drain the beans well before mixing them in: this yellow bean salad with chicken bologna and cherry tomatoes stays creamy, not watery. The cubes of bologna and mozzarella, corn kernels and quartered tomatoes make a cold, hearty salad with visible chunks in every serving. I prefer it cold, straight from the fridge just before the meal. Prep: 20 minutes. Cook: 0 minutes. Total: 20 minutes. Servings: 3. About 290 kcal and 14 g protein per serving.
Ingredients
- 1 jar yellow wax beans (400 g drained)
- 100 g chicken bologna
- 1 mozzarella (125 g)
- 10 cherry tomatoes
- 2 tablespoons corn
- 2 tablespoons sour cream
- 1 tablespoon mayonnaise
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/2 teaspoon dried dill (optional)
Preparation
1. Drain the beans well and leave them in a sieve for a few minutes. 2. Cut the chicken bologna and mozzarella into small cubes. Quarter the cherry tomatoes. 3. Put the beans in a bowl and add the bologna, mozzarella, tomatoes and drained corn. 4. Mix the sour cream with the mayonnaise, then fold the dressing into the salad. Season with salt and pepper, and sprinkle over the dried dill if using.
Notes
With toast on the side, it makes a lunch. Choose whole pods, not broken ones, and let them drain well; if they seem soft, fold them in at the end, gently. Bologna can be salty, so taste the salad before adding all the salt. You can keep it covered in the fridge for up to 3 days; if you make it ahead, keep the dressing separate and mix it in close to mealtime. For a different flavor, replace the bologna with 100 g boiled chicken breast; mozzarella adds dairy.
Frequently asked questions
Can I use frozen green beans?
Yes. Boil 400 g for 8-10 minutes, until the pods are tender, then let them cool completely before adding them to the salad.
Can I replace the cherry tomatoes with regular tomatoes?
Yes, use 2 small tomatoes, about 200 g, and remove the seedy part before dicing them.
Can I use fresh mozzarella in a ball?
Yes. Leave the 125 g ball to drain for 10 minutes before cutting it, so it doesn't release too much whey into the bowl.
