New potato and smoked mackerel salad

New potato and smoked mackerel salad starts with new potatoes deep-fried in palm oil. The idea, inspired by Madi, pairs the fish with juicy tomatoes, onion and olives, with a little vinegar and olive oil. I serve it once the potatoes have cooled, so you can really taste the browned pieces. Prep: 20 minutes. Cook: 24 minutes. Rest: 10 minutes. Total time: 54 minutes. Servings: 4. About 400 kcal and 13 g protein per serving.
Ingredients
- 600 g new potatoes
- 1500 ml palm oil
- 1 smoked mackerel
- 1 medium fresh onion (100 g)
- 3 tomatoes
- 50 g pitted black and green olives
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 15 ml olive oil
- 15 ml vinegar
- 10 g parsley or dill (optional)
Preparation
1. Peel the new potatoes, wash them, cut them into quarters and dry them well. 2. Heat the palm oil to 170 °C. Fry the potatoes in two batches, 12 minutes each, until browned and tender. Lift them out, drain off the oil and leave to cool for 10 minutes. 3. Remove the skin and bones from the mackerel, then break it into pieces. Cut the onion into julienne strips and the tomatoes into large cubes. Slice the olives. 4. Put the potatoes, mackerel, onion, tomatoes and olives in a bowl. Add 1 teaspoon of salt and 1/2 teaspoon of ground pepper. 5. Pour in 15 ml of olive oil and 15 ml of vinegar, then toss gently and taste. Sprinkle with chopped parsley or dill, if you like.
Notes
The salad will keep in the fridge for up to 3 days, but the potatoes lose some of their crisp texture once they sit in the dressing. You can replace the regular vinegar with 15 ml of balsamic vinegar, or the parsley with dill. Choose small, firm new potatoes; if the mackerel is very salty, taste before adding more salt. Dry the potatoes well after washing and fry them without overcrowding the pan. Contains fish. Serve the salad with slices of dark bread.
Frequently asked questions
Can I use hot-smoked mackerel?
Yes, 200 g of hot-smoked mackerel fillet can replace the whole fish; break the fillet into larger pieces, as it crumbles easily.
What should I do if my new potatoes are larger?
Cut them into cubes about 3 cm across and fry for 18-20 minutes, until browned and tender.
How do I toss the salad without crushing the potatoes?
Use a wide spoon and turn the mixture over 3-4 times instead of tossing it vigorously.
