Vegan zucchini fritters

Dried basil goes into these vegan zucchini fritters, pan-fried until their edges turn golden. Grated zucchini is held together with onion, garlic, dill, parsley and flour, while the middle stays soft; they’re good cold too, and still hold their shape. I make them about the size of a heaping spoonful, so they have plenty of browned edge. Prep: 20 minutes. Cooking: 24 minutes. Rest: 10 minutes. Total time: 54 minutes. Serves: 4. About 175 kcal and 4 g of protein per serving.
Ingredients
- 2 medium zucchini (600 g)
- 1 large onion (180 g)
- 3 garlic cloves
- 4 sprigs of dill
- 5 sprigs of fresh parsley
- 4-5 tablespoons of flour
- 1 teaspoon of salt
- 1/2 teaspoon ground pepper
- 1 level teaspoon of dried basil
- 150 ml of oil
Preparation
1. Wash and peel the zucchini, then grate them on the large holes of a box grater. 2. Leave the grated zucchini for 10 minutes, then squeeze out the liquid well. 3. Peel the onion and garlic and chop them in a blender. Wash the dill and parsley, remove the stems and chop the leaves. Add them to the zucchini along with the onion, garlic and 4-5 tablespoons of flour. Mix, then add 1 teaspoon of salt, 1/2 teaspoon of pepper and 1 level teaspoon of dried basil. 4. Heat 150 ml of oil in a pan over medium heat. Scoop up some of the mixture with a spoon, shape the fritters in your palm and fry them for 24 minutes in total, until browned on both sides. Transfer them to a plate lined with paper towels.
Notes
I serve them with tomato salad; they’re a bit like a savory pancake, only you can feel the little pieces of zucchini. For a gluten-free version, replace the flour with 4-5 tablespoons of rice flour; regular flour contains gluten. Keep them in a sealed container in the fridge for up to 3 days. Small zucchini have fine seeds and firmer flesh. Sometimes the center is very soft, and the fritters break when you turn them.
Frequently asked questions
Can I use yellow zucchini?
Yes, choose a young one with smooth skin and no soft spots; grate it just like green zucchini.
What can I use instead of dried basil?
Add 1 tablespoon of chopped fresh basil to the mixture along with the dill and parsley.
Why do they break when I turn them?
Leave the first side undisturbed for about 3 minutes, until it’s browned and comes away easily from the pan, then turn the fritter.
