Fried Eggplants

Fried Eggplants - A Crunchy and Savory Delicacy Preparation time: 15 minutes Cooking time: 10 minutes Total time: 25 minutes Number of servings: 4 Discovering the recipe for fried eggplants was a culinary revelation! This simple and quick recipe transforms the humble vegetable into a crunchy delight that can be enjoyed as an appetizer or a side dish. Fried eggplants are perfect to serve alongside various dishes, but they can also be a perfect snack, especially when accompanied by tzatziki sauce or flavored yogurt. Let's get started! Ingredients: - 2 large eggplants - 200 g flour (or breadcrumbs for a crunchier texture) - 2 eggs - 200 ml milk (or sparkling water for a lighter version) - Salt and pepper to taste - Oil for frying (sunflower or olive oil, depending on preference) Step 1: Preparing the eggplants Start by washing the eggplants well under cold running water. Cut them into slices about 1 cm thick. You can choose round or lengthwise slices, depending on your preference. Sprinkle a little salt on the eggplant slices and let them sit for 15 minutes. This step helps to remove bitterness and excess water, as well as to achieve a firmer texture. Step 2: Preparing the batter In a bowl, beat the two eggs with the milk (or sparkling water) and a pinch of salt. It is important that the eggs are well incorporated to obtain a uniform batter. In another bowl, place the flour (or breadcrumbs) and add a pinch of pepper for extra flavor. Step 3: Frying the eggplants Heat a deep pan with oil over medium heat. The oil should be hot enough to fry the eggplant slices, but not so hot that they burn. Take each slice of eggplant, first dip it in the egg batter, then in the flour (or breadcrumbs), and carefully place it in the pan. Fry the slices on each side for 3-4 minutes until they become golden and crispy. Step 4: Finishing and serving After frying all the eggplant slices, place them on a paper towel to absorb excess oil. You can sprinkle a little salt immediately after taking them out of the pan to enhance the flavor. Serving suggestions: Fried eggplants are delicious served warm, alongside tzatziki sauce or Greek yogurt with garlic and dill. You can also add a few lemon slices for an extra freshness. Additionally, they can be integrated into a Mediterranean salad or used as a filling for sandwiches. Possible variations: For a healthier recipe, you can bake the eggplants in the oven instead of frying them. In this case, brush the slices with a little olive oil and sprinkle your favorite spices, then bake at 200°C for 20-25 minutes. You can also experiment with different spices, such as smoked paprika or cumin, to add extra flavor. These fried eggplants are not only a quick recipe but also a perfect way to impress friends and family with a simple yet special dish. So, don't hesitate to try them and enjoy every bite!
Preparation
Eggplant is peeled and cut into lengthwise slices - I know it sounds weird, so I don't even think it's correct (wink). It is sprinkled with salt and left for about half an hour to draw out the bitter juice. They are wiped with kitchen paper towels and fried in oil until golden brown. We served them with fresh bread.
