Roasted eggplant salad with roasted peppers

Roasted eggplant salad with roasted peppers brings together roasted eggplant, kapia peppers and onion in an oil-bound mixture. Some of the peppers are chopped into the salad, while the rest are served alongside in strips with a tangy-sweet dressing, so the plate has both a creamy part and a juicier one. I arrange a few pepper strips on top so they show. Prep: 30 minutes. Cook: 60 minutes. Rest: 45 minutes. Total: 135 minutes. Serves: 8. Approximately 320 kcal and 4 g protein per serving.
Ingredients
For the salad
- 1500 g eggplants
- 1000 g kapia peppers
- 2 medium onions (300 g)
- 1 teaspoon regular mustard
- 150 ml sunflower oil
- 1/2 teaspoon fine salt
- 1 teaspoon fine salt
- 1/2 teaspoon ground pepper
For the peppers in dressing
- 60 ml roasted pepper juices
- 1 tablespoon granulated sugar
- 3 tablespoons apple cider vinegar
- 4 tablespoons olive oil
- 1/2 teaspoon fine salt
- 15 g fresh celery leaves
Preparation
1. Wash the eggplants and peppers. 2. I roasted the peppers in the oven at 220 °C for 30 minutes, until their skins blistered; I roasted the eggplants directly over the stove burner for 30 minutes, turning them until they softened and their skins blackened. 3. Sprinkle 1/2 teaspoon of salt over the peppers, then cover all the vegetables with a towel and leave them to cool for 30 minutes. 4. Peel the vegetables. Leave the eggplants to drain in a plastic sieve for 15 minutes, and save the pepper juices for the dressing. 5. Process the onions in a food processor and leave them to drain in a cheesecloth-lined sieve. Chop the eggplants in the food processor; usually, you can also chop them with a wooden knife, and the food processor comes in handy when you’re in a hurry. 6. Put the eggplants, drained onion, 3 roasted peppers torn into strips, mustard, 1 teaspoon of salt and the pepper in a bowl. Mix, gradually incorporating 150 ml of oil, until the salad is creamy. 7. Tear the remaining peppers into strips and put them in a bowl. Mix 60 ml of pepper juices with the sugar, 3 tablespoons of vinegar, the olive oil and 1/2 teaspoon of salt, then pour the dressing over the peppers and sprinkle with the chopped celery leaves.
Notes
It’s suitable for fasting; if you don’t have regular mustard, use 1 teaspoon of Dijon mustard. Very large eggplants may need a few extra minutes on the burner; leave them until the flesh has softened well next to the skin. If you don’t have much pepper juice, use all the juice you collected and make the dressing more concentrated, without adding water. The texture is reminiscent of plain eggplant salad, with soft strips of pepper throughout. Serve it alongside grilled meat. Covered, it keeps in the fridge for up to 3 days; if you make it ahead, keep the salad separate from the peppers in dressing.
Frequently asked questions
Why drain the onion separately?
The food processor releases a lot of juice, and undrained onion can taste bitter; leave it in cheesecloth for 8 minutes before mixing it in.
Can I roast the eggplants in the oven?
Yes, put them on a tray at 220 °C for 40 minutes, turning them halfway through.
What should I do if the salad is too watery?
Put it in a fine sieve for 10 minutes before serving, then stir gently.
Can I use bell peppers instead of kapia peppers?
Yes, choose red peppers and roast them until their skins are blackened over almost the entire surface, about 35 minutes.
What can I use to chop the eggplants without a food processor?
Use a wooden knife and chop them until no large pieces remain.
