Winter Melon Risotto

To prepare a delicious risotto with melon, we start by boiling the vegetable broth. If you wish, you can also use a broth cube, but my recommendation would be to opt for homemade broth, as the flavor will be much more intense. Once the broth starts to boil, we reduce the heat to low, so it stays warm and helps us in the process of cooking the rice. In a pot with thicker walls, specifically intended for risotto, we add a quantity of butter the size of a walnut (about half of the total amount we will use) and let it melt over medium heat. When the butter is completely melted, we add the rice and let it sauté for a few minutes, stirring constantly, until it becomes slightly translucent. It is essential not to let it burn, but to give it time to release its aroma. After the rice has sautéed, we pour in the sparkling wine, ensuring that the heat is high enough to allow the alcohol to evaporate quickly. After the liquid has reduced considerably, we lower the flame and start stirring more frequently. This is the moment when we add the melon cubes and a little salt. The melon adds a subtle sweetness to the risotto, while the salt will enhance the flavors. We continue to stir and let the liquid reduce, but we don't forget to add a ladle of hot broth, allowing it to be absorbed by the rice before adding more. Cooking the rice usually takes between 15 and 17 minutes, but it is important to check by taste, as each type of rice behaves differently. The rice should be al dente, meaning soft on the outside but with a firmer core. When the rice is ready, we take the pot off the heat and add the remaining butter and grated Parmesan or Grana cheese, stirring well to achieve a creamy texture. This stage, known as "mantecare", is essential for a perfect risotto. We let the risotto rest for five minutes, then it is ready to serve. If you want to add an extra touch of flavor and freshness, you can sprinkle fresh melon cubes either inside the dish or on top, along with a few thin slices of prosciutto. This combination of textures and flavors will transform each serving of risotto into an unforgettable culinary experience, perfect for an elegant dinner or a family meal.
