Mini pizzas for kids

Pasta/Pizza - Mini pizzas for kids by Iosefina K. - Recipia

Mini pizzas for kids are little shapes cut from risen dough, topped with tomato sauce, pressed ham and melted semi-hard cheese, with browned edges. I roll the dough out to about 5 mm thick and keep it pliable so it’s easy to cut out; after baking, the centers stay fluffy and the edges brown. Prep: 25 minutes. Cook: 20 minutes. Rest: 60 minutes. Total time: 105 minutes. Serves: 8. About 460 kcal and 22 g protein per serving.

Ingredients

  • 500 g flour
  • 25 g dry yeast
  • 1/4 teaspoon salt
  • 250 ml milk
  • 30 g oil
  • 5 ml oil for brushing
  • 10 slices pressed ham
  • 300 g semi-hard cheese
  • 200 g tomato paste or ketchup

Preparation

1. Put the flour, dry yeast and salt in a bowl. Pour in the lukewarm milk and knead for 8 minutes, then gradually work in 30 g of oil and knead for 2 more minutes, until you have a smooth dough. 2. Cover the bowl and leave the dough to rise for 60 minutes, until doubled in size. 3. Preheat the oven to 200°C. Roll the dough out to about 5 mm thick and cut out shapes using different cutters. 4. Arrange the shapes on a baking sheet or on the bases of springform pans. Brush each one with a drop of the 5 ml of oil, then add tomato sauce or ketchup, pressed ham and semi-hard cheese, all diced. 5. Bake for 20 minutes, until the edges are browned and the cheese has melted. Serve warm or cold.

Notes

Store the mini pizzas in a sealed container in the fridge for up to 3 days; let them sit at room temperature for a little while before serving. Serve them with cucumber and bell pepper sticks. Small shapes brown faster than large ones, so keep an eye on the edges. Cutters of similar sizes help the mini pizzas bake at the same pace. Thick tomato sauce stays on the dough better than a watery one; if the paste is very concentrated, thin it with a little water. You can use 150 g of well-drained canned corn instead of the ham. The dough contains gluten, and the milk and cheese contain dairy.

Frequently asked questions

What should I do if the dough sticks to the rolling pin?

Sprinkle a tablespoon of flour on the work surface and turn the dough over once as you roll it out.

Why does the dough stay dense?

Milk that is too hot can weaken the yeast. Use it lukewarm, at no more than 40°C.

Can I use mozzarella instead of semi-hard cheese?

Yes, 250 g of low-moisture mozzarella works, cut into small cubes.
