Country-style chicken breast pizza

Pasta/Pizza - Country-style chicken breast pizza by Patricia K. - Recipia

The dough should be firm enough to roll out, and the country-style chicken breast pizza bakes for 35 minutes at 180°C. Minced chicken with onion and bell peppers sits between two layers of dough, with the top brushed with egg and milk. I mince the chicken finely so the filling spreads evenly. Prep: 25 minutes. Cook: 45 minutes. Rest: 75 minutes. Total time: 145 minutes. Serves: 4. About 700 kcal and 46 g of protein per serving.

Ingredients

  • 400 g flour
  • 25 g fresh yeast
  • 2 teaspoons salt
  • 200-215 ml lukewarm water
  • 50 ml oil
  • 600 g chicken breast
  • 1 medium onion (150 g)
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon thyme
  • 2 tablespoons Univer ketchup
  • 4 bell peppers
  • 1 tablespoon Univer pepper paste
  • 1 egg
  • 15 ml milk

Preparation

1. Pat the chicken breast dry with paper towels. Peel the onion and mince it together with the chicken. 2. Put the flour in a bowl and make a well in the middle. Add the yeast, 1 teaspoon of salt and 200 ml of lukewarm water, then mix to make a yeast mixture. 3. Leave the mixture to rise for 10 minutes, until it puffs up and bubbles. 4. Add 25 ml of oil and knead. If the dough is still too firm, gradually work in up to 15 ml more lukewarm water. Leave it to rise for 60 minutes, until it has visibly puffed up. 5. Heat the other 25 ml of oil in a pan. Add the minced chicken and onion, 1 teaspoon of salt, the pepper and thyme. Sauté for 10 minutes, until the chicken is no longer pink, then leave the filling to cool. 6. Divide the dough into two equal pieces. Roll the first piece into a circle on a baking tray, spread it with ketchup, then distribute the filling over it. Slice the peppers into rounds and arrange them on top; dot with pepper paste. 7. Roll out the second piece of dough and cover the filling. Cut the pizza into triangles with a knife and leave it to rise for 5 minutes. 8. Bake at 180°C for 30 minutes, until it starts to brown. Beat the egg with the milk, brush the top and bake for another 5 minutes, until browned.

Notes

A tablespoon of sweet pepper paste can replace a tablespoon of Univer paste if you can’t find it. The dough contains gluten, and the egg wash contains egg and milk. If the chicken and onion release liquid after 10 minutes, keep the pan on the heat until it evaporates; there shouldn’t be any liquid at the bottom of the filling when you leave it to cool. Pepper paste may already be salty, so taste the mixture before adding more salt, especially if the ketchup is salty too. When the dough rises, I don’t rely only on the clock, especially if it turns out firmer; I look for it to puff up visibly and stop looking tight. Keep the baked pizza covered in the fridge for up to 3 days. To reheat, bake the slices for 8 minutes at 180°C, until hot and the base is slightly crisp. Thicker slices may need another minute or two. Serve with a simple green salad.

Frequently asked questions

Can I use dry yeast?

Yes. Use 7 g of dry yeast instead of the cube of fresh yeast.

Can I use chicken thighs instead of breast?

Yes, use 600 g of boneless, minced chicken thighs; sauté them for 12 minutes, until they’re no longer pink.

What should I do if the dough is still too firm?

Work in 10 ml of lukewarm water at a time and knead again, until it stretches without tearing.

Can I replace the ketchup?

Yes. Use 30 g of thick tomato passata and spread it in a thin layer.
