Conchiglioni with meatballs and beans

Pasta/Pizza - Conchiglioni with meatballs and beans by Eusebia G. - Recipia

Conchiglioni with meatballs and beans brings large pasta shells together with small beef meatballs and beans, all in a tomato and cream sauce. Grana Padano goes in at the end, and the pasta is coated in sauce rather than filled one shell at a time. I serve them while the sauce is still sliding off the shells. Prep: 20 minutes. Cook: 24 minutes. Rest: 15 minutes. Total time: 59 minutes. Serves: 4. About 640 kcal and 31 g protein per serving.

Ingredients

  • 2 slices bread
  • 200 ml milk
  • 200 g ground beef
  • 1 clove garlic
  • 1 egg
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon ground pepper
  • 1 tablespoon flour
  • 3 tablespoons sunflower oil
  • 1 tablespoon sunflower oil
  • 400 ml passata
  • 260 g canned beans drained
  • 300 g conchiglioni
  • 3000 ml water
  • 1 teaspoon fine salt
  • 100 ml cooking cream 20% fat
  • 2 tablespoons grated Grana Padano or Parmesan
  • 1/4 teaspoon ground pepper
  • 1 tablespoon chopped parsley

Preparation

1. Take the cream out of the fridge 15 minutes ahead. Soak the bread in the milk for 10 minutes, then drain and squeeze it dry. Put it in a bowl with the meat, crushed garlic, beaten egg, 1/2 teaspoon salt and 1/4 teaspoon pepper. Mix well. 2. Shape walnut-sized meatballs and roll them in flour. Fry them in 3 tablespoons of oil, turning them, for 8 minutes, until golden. Transfer to paper towels. 3. Heat 1 tablespoon of oil in a saucepan, then add the passata and drained beans. Simmer for 4 minutes, until small bubbles form in the sauce. 4. Cook the conchiglioni for 10 minutes in 3000 ml water with 1 teaspoon salt, or 2 minutes less than the time on the package. Drain the pasta. 5. Toss the pasta with the sauce. Stir 2 tablespoons of hot sauce into the cream, then add the cream to the pan along with the meatballs, Grana Padano and 1/4 teaspoon pepper. Heat over low heat for 2 minutes, until everything is hot. Sprinkle with the chopped parsley.

Notes

I used a canned bean mix with kidney, borlotti and black-eyed beans; drain the beans well so they don't thin the sauce. Beef with a little fat keeps the meatballs more tender, and smaller shells can cook 2 minutes less than larger ones. Serve them with a simple green salad. You can replace the mix with 260 g kidney beans; the bread contains gluten, and the milk, cream and cheese are dairy, with egg also present. Leftovers keep in the fridge for up to 3 days.

Frequently asked questions

Can I make the meatballs with pork?

Yes. Use 200 g ground pork and fry the small meatballs until golden.

Can I replace the canned beans with dried beans?

Yes. Soak 100 g dried beans for 8 hours, then simmer for about 60 minutes, until tender. Use them drained in place of the canned beans.

Can I use rigatoni instead of conchiglioni?

Yes, you can use 300 g rigatoni; cook them for 12 minutes or until still slightly firm.

What should I do if the meatball mixture is too soft?

Leave it in the fridge for 15 minutes before shaping the meatballs, then fry them as usual.
