If you choose to make mayonnaise at home, place the egg yolk and mustard in a bowl. Using a whisk or a hand mixer, mix well until the mixture becomes homogeneous. Start adding the oil gradually, drop by drop, continuing to mix constantly. As the emulsification takes place, you can add the oil in a thinner stream.
