Pizza with Piadine

To start, we prepare the dough for piadine. In a large bowl, we add 500 g of white flour, a teaspoon of salt, and a tablespoon of olive oil. We mix the dry ingredients with a spatula or by hand until they are well combined. The next step is to gradually add about 250 ml of warm water. We knead the dough for 10 minutes until it becomes elastic and smooth. We cover the bowl with a damp cloth and let the dough rise for 30 minutes in a warm place to allow it to develop. Once the dough has risen, we divide it into 6-8 equal balls. On a floured surface, we roll each ball into a thin sheet, being careful not to make it too thick, to achieve crispy piadine. We place a non-stick skillet over medium heat and let it heat up. We cook each piadina for 2-3 minutes on each side until they become slightly golden and those beautiful browning spots form. It is important not to overcook them as we want to keep them a little soft for filling later. After we finish cooking all the piadine, we let them cool on a rack. Now, we are ready to turn our piadine into delicious pizzas. In a bowl, we prepare a simple sauce from ready-made tomato juice, which we can season with salt, pepper, and some herbs like oregano or basil for extra flavor. On each cooled piadina, we spread an even layer of tomato sauce. Then, we add slices of fresh mozzarella, which will melt beautifully in the oven. We continue with prosciutto cotto cut into thin strips, which adds a savory taste. We don’t forget about green or black olives, which bring a pleasant contrast of texture and flavor, and finally, we drizzle everything with a bit of extra virgin olive oil. We preheat the oven to 220 degrees Celsius and place our piadina pizza on a tray. We bake the pizza for 10-15 minutes, or until the cheese is completely melted and the edges of the piadina become crispy. Once the pizza is ready, we take it out of the oven and let it cool for a few minutes. We slice it and serve, enjoying a delicious dish that is easy to make but full of flavor and color. Bon appétit!
