Penne with tomato sauce and bacon

Penne with tomato sauce and bacon is served hot, for lunch or dinner, with the sauce tucked into the pasta tubes. The tomatoes, browned bacon, dry salami and mushrooms make a thick sauce with visible pieces, and the grated cheese melts over the hot pasta. For penne, I prefer to drain them while they’re still a little firm in the centre. Prep: 15 minutes. Cook: 34 minutes. Total time: 49 minutes. Serves: 4. About 850 kcal and 32 g protein per serving.
Ingredients
- 3000 ml water
- 500 g penne
- 30 ml oil
- 120 g sliced bacon
- 50 g dry salami (optional)
- 2 medium red onions (300 g)
- 150 g jarred mushrooms
- 900 g pasta sauce
- 30 ml water
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon oregano
- 60 g grated cheese
Preparation
1. Bring 3000 ml of water to a boil. When it boils, add the penne and cook for 10 minutes or according to the time on the package, until they’re still slightly firm. 2. Heat 15 ml of oil in a frying pan and fry the bacon and salami for 5 minutes, until browned. Transfer them to paper towels. 3. Cut the fried bacon into bite-size pieces, and halve the salami slices. 4. Peel the onions and chop them finely. Heat 15 ml of oil in a wok and cook the onions for 5 minutes, until softened. 5. Drain the mushrooms and add them to the wok. Stir and cook for 3 minutes, then add the pasta sauce, 30 ml of water, the salt, pepper and oregano. Simmer the sauce over low heat for 11 minutes. 6. Drain the penne and add them to the wok. Add the bacon and salami, stir, then serve with grated cheese.
Notes
You can leave out the dry salami; for a gluten-free version, choose gluten-free penne, while the cheese means the dish still contains dairy. Thicker bacon slices need a little longer in the pan, until browned on both sides. Drain jarred mushrooms well so they don’t thin the sauce. If the sauce seems too salty, use less cheese on top. Serve with a green salad and cucumber. Store the pasta in a sealed container in the fridge for up to 3 days.
Frequently asked questions
Can I use fresh mushrooms?
Yes, add 150 g of sliced mushrooms to the wok and cook for 5-6 minutes, until softened and the liquid they release has reduced.
What should I do if the sauce has thickened too much?
Stir in 45 ml of hot pasta water a little at a time, until it loosens and coats the penne easily.
Can I use diced bacon instead of slices?
Yes, use the same 120 g and brown the cubes for 6-7 minutes, stirring from time to time.
What kind of cheese should I grate on top?
A harder cheese grates easily and stays in flakes; try 40 g if you only want a thin layer.
