Chinese noodles with chicken

I had some leftover nests of noodles from a soup, so I decided to improvise some chicken "noodles" using what I had in the fridge. Instead of Chinese noodles, I went for classic Romanian noodles. I didn't have sweet chili sauce, so I replaced it with a quick mix of tomato juice, honey, and chili. The result turned out well and I think it's a good solution when you want something quick and different without complicated ingredients. Quick Info Total time: about 1 hour and 30 minutes (including marinating) Preparation time: 20 minutes Cooking time: 30-40 minutes Servings: 3-4 Difficulty: easy to medium Recipe type: main, quick, adaptable for lunch or dinner Ingredients 1 chicken breast (400-600 g) 2-3 small carrots 2 bell peppers (preferably red, yellow, and/or green) 2 small onions 1 head of garlic 3-4 nests of noodles (or rice noodles, if you want the more "Chinese" version) 1 small piece of celery mushrooms (optional, usually champignon) 1 small zucchini 150 ml dry white wine extra virgin olive oil (a few tablespoons) salt pepper curry rosemary thyme basil soy sauce (to taste) sweet chili sauce (or the improvised version: 1/2 cup tomato juice + 1 teaspoon honey + 1 teaspoon chili powder) Preparation Method 1. Wash the chicken breast well and cut it into thin, uniform strips. Place it in a bowl, add salt, pepper, curry, rosemary, thyme, and basil. Also add the white wine and 3-4 crushed garlic cloves. Mix and refrigerate for at least an hour. 2. When the chicken has marinated, take it out of the fridge. Heat a large skillet with a tablespoon of olive oil. Sauté the chicken over high heat until it starts to brown. Do not cook it completely – just enough to get a light crust. Remove it from the skillet and set aside. 3. In the remaining oil, add the julienned onion and the remaining garlic (thinly sliced or crushed, as preferred). Sauté for 1-2 minutes. 4. Cut all the vegetables into thin sticks: carrots, bell peppers, celery, zucchini, and mushrooms. Add them to the skillet over the onion and garlic. Stir and let them cook over medium heat until they soften and become slightly translucent. Do not fry them too hard. 5. Put the chicken back over the vegetables, mix, and let it cook on low heat for another 10 minutes. Taste and adjust with salt, pepper, and spices as preferred. 6. Meanwhile, boil the noodles in salted water. Follow the time on the package, usually 3-5 minutes. Drain well. 7. When the chicken and vegetables are ready, add the drained noodles directly to the skillet. Gently mix so as not to crush the pasta. 8. Add soy sauce to taste. If you have sweet chili sauce, add it as preferred. If not, mix the tomato juice with honey and chili powder and put some of this sauce in the skillet, just enough to lightly bind everything together. 9. Remove from heat. Serve immediately. Why I make this recipe often It’s practical when I have leftover noodles from soup and vegetables in the fridge. It adapts easily with what I have on hand, is not fussy, and goes quickly once the chicken is marinated. I like that you don’t need special ingredients and you can adjust the flavors to your liking. Tips and Variations Tips Don’t leave the chicken on the heat too long, so it doesn’t dry out. Vegetables should be cut thinly to cook evenly and quickly. Soy sauce is added at the end, otherwise, it can color the vegetables too much. If you don’t want to improvise, use a store-bought sweet chili sauce. Substitutions The chicken breast can be replaced with boneless thighs or even turkey meat. Romanian noodles can be replaced with rice noodles or even very thin spaghetti. If you don’t have white wine, you can omit it or add a bit of lemon water for acidity. Mushrooms and zucchini can be omitted; the recipe works without them. Variations You can add broccoli or frozen peas if you want something more colorful. For spices, you can try a bit of grated ginger or coriander if you like more Asian flavors. Serving Ideas It is eaten hot, straight from the skillet. For extra flavor, you can sprinkle a bit of sesame or chopped green onion at the end. It goes well with a simple salad or even pickled cucumbers. Frequently Asked Questions 1. Can I use another type of meat? Yes, turkey or even very thinly sliced lean pork works, but the marinating and cooking time may vary a bit. 2. What can I use instead of sweet chili sauce if I don’t have it? You can mix half a cup of tomato juice with a teaspoon of honey and a teaspoon of chili powder. It comes quite close to the original taste. 3. Can some vegetables be omitted? Yes, the recipe is flexible. If you don’t have zucchini or mushrooms, you can just use bell peppers, carrots, and onions. The texture will be slightly different, but the taste remains balanced. 4. Can authentic Chinese noodles be used? Yes, if you have them on hand, you can use them instead of Romanian noodles. Boil them according to the package instructions. 5. Is it necessary to marinate the meat for so long? Ideally, at least an hour, to absorb the flavor. If you’re in a hurry, 30 minutes may be enough, but the taste won’t be as intense. Nutritional Values Estimate for one serving: Approximately 400-450 kcal, 35 g protein, 45 g carbohydrates, 10-12 g fat. Values depend on the exact amount of oil used, the type of pasta, and the sauces added. The recipe is relatively balanced, with many vegetables, protein, and quite low fat if you don’t use excess oil. Storage and Reheating Best consumed immediately. If leftovers remain, store in the fridge for up to 2 days in a sealed container. When reheating, add a tablespoon of water and gently heat in a skillet, stirring often to prevent the noodles from drying out. Freezing is not recommended, as the texture of the pasta changes.
