Salmon Roll

To prepare a culinary delight with salmon, we start by ensuring we have the necessary ingredients and the right utensils. The first step is to carefully remove the bones from the salmon fillets. It is recommended to use a special fish bone tweezers, as salmon has very few bones, and removing them will ensure a pleasant texture in the dish. Once we are done with the bones, we will remove the skin from the fillets. This is an essential step, as we want every bite to be pure and flavorful. The next step is to cut a strip of about 3 cm wide from the belly fillet of the salmon. This strip will be used to add a smoky flavor and enrich the taste of the dish. We then prepare a wok, placing a piece of aluminum foil at the bottom. We add a tablespoon of rice, a tablespoon of sugar, and a tablespoon of green tea, which will contribute to the unique aroma of the salmon. We place the belly strip on the grill of the wok and cover it with a lid, letting everything smoke for about 20 minutes. While the salmon is smoking, we take care of the vegetables. We cut the carrot into small pieces and boil them for 4 minutes. The fresh peas will be boiled for 2 minutes, retaining their freshness and vibrant color. In a blender, we combine the smoked salmon, sour cream, egg white, and pepper. It is important not to add salt, as the smoked salmon is already salty and will provide enough flavor. After mixing the ingredients, we add the pieces of carrot, bell pepper, and peas, stirring everything with a wooden spoon to integrate the flavors. Now we are ready to form the roll. We gently beat the salmon fillets with a meat mallet, and then we place the first fillet on a piece of baking paper long enough to wrap the roll. We add half of the obtained mixture to the first fillet, place the smoked belly strip in the middle, add the other half of the mixture, and cover with the second salmon fillet. We wrap everything in the baking paper and tie it with cooking twine. We grease a baking tray with oil and also grease the roll, then place it in the preheated oven at 200 degrees Celsius, letting it bake for 35 minutes. After it has been baked, we take the roll out of the oven and let it cool. When it has cooled, we slice the roll and serve it alongside a fresh green salad or a side of mashed potatoes or baked potatoes in yogurt marinade. This recipe will not only delight your taste buds but will also bring a sophisticated touch to your table.

- 100 ml milk
- 1 egg white
