After the vegetables have cooked and softened, we turn off the heat and season the dish to taste. We add salt and freshly ground pepper, as we like, but also orange and lemon juice, which will bring a pleasant contrast and a note of freshness. It is important that these ingredients are added in moderation, depending on the sweetness or acidity of the wine used. We mix well to combine all the flavors and, in the end, we can serve the dish warm, alongside a side of rice or fresh bread. This recipe is not only tasty but also easy to make, perfect for a quick dinner or a savory lunch.
