Red lentil stew in the multicooker

Red lentil stew in the multicooker simmers with chicken and vegetables, then can be left chunky or blended until creamy. The carrot, pepper and zucchini soften in the tomato sauce, and the red lentils thicken it; I blend the vegetables and keep the chicken pieces whole. Prep: 20 minutes. Cook: 63 minutes. Total time: 83 minutes. Serves: 4. About 500 kcal and 37 g protein per serving.
Ingredients
- 200 g red lentils
- 1500 ml water
- 1 tablespoon oil
- 1 large onion (200 g)
- 2 garlic cloves
- 400 g boneless chicken thighs
- 3 medium carrots (240 g)
- 1 zucchini (300 g)
- 1 pepper (150 g)
- 200 g tomato passata
- 1/2 teaspoon dried basil
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
- 10 g parsley
- 80 g croutons
Preparation
1. Rinse the lentils well in cold water. Put them in the multicooker with 1500 ml water and select the Boil program for 15 minutes, until the lentils are soft. Drain the lentils and reserve the liquid. 2. Chop the onion and garlic. Pour the oil into the pot, add them and select the Fry program for 3 minutes, until the onion starts to soften. 3. Pat the chicken dry with paper towels and cut it into pieces. Cut the carrots, zucchini and pepper, add them to the pot and cook everything on Fry for another 5 minutes, until the chicken is white on the outside. 4. Pour in 700 ml of the reserved liquid, select Stew for 20 minutes and let the vegetables and chicken simmer until soft. 5. Add the lentils, tomato passata, basil, salt and pepper. Select Stew again for 20 minutes, until the lentils break down and the sauce thickens. 6. Add the parsley to the pot. Remove the chicken pieces, blend the stew in a blender and return the chicken to the pot. If the purée is too thick, thin it with a little of the reserved liquid. Serve with croutons.
Notes
Serve the croutons on the side, just before eating. The stew keeps for up to 3 days in a covered container in the fridge. You can replace the parsley with 10 g dill; regular croutons contain gluten, so for a gluten-free meal use 80 g certified gluten-free croutons. I start the multicooker about an hour and a half before the meal, so I have time to chop everything and run the long programs. If the lentils are still firm in the middle after the final stage, cook them on Stew for another 5 minutes; when blending, fill the blender no more than halfway with the hot stew.
Frequently asked questions
Can I use chicken breast instead of thighs?
Yes. Cut the breast into 2 cm cubes and check that it is cooked through before taking it out to blend.
Can I use green lentils?
Yes, but the lentils will stay more intact. Cook 200 g separately for about 25-30 minutes, then add them to the pot.
Can I use fresh tomatoes instead of tomato passata?
Yes. Grate 250 g ripe tomatoes and add them to the pot with the lentils; if they are very juicy, use less of the reserved liquid.
Can I make it without a blender?
Yes, you can leave everything chunky. For a half-creamy texture, blend about a third of the vegetables and stir them back in.
