Berry smoothie with whipped cream

Berry smoothie with whipped cream is made with frozen berries blended with honey and water, then topped with a fluffy layer of whipped cream. It comes out cold and thick, somewhere between a juice and a smooth purée, with tart fruit under the sweet cream. With frozen fruit, I prefer the berries to be separate, not frozen together in an icy lump. Prep: 10 minutes. Cook: 0 minutes. Rest: 15 minutes. Total time: 25 minutes. Servings: 2. About 320 kcal and 2 g protein per serving.
Ingredients
- 200 g frozen berries
- 4 tablespoons honey
- 200 ml still water
- 100 ml sweetened plant-based whipping cream
Preparation
1. Put the frozen berries in the blender jar and add the honey and still water. 2. Screw on the blade lid, plug in the blender and blend for about 30 seconds, until it reaches the consistency you want. 3. Pour the smoothie into glasses and chill for 15 minutes. 4. Whip the sweetened plant-based cream, transfer it to a piping bag and decorate the glasses.
Notes
Small berries blend more quickly than whole strawberries if they’re in the mix. A roomy blender jar helps the fruit circulate around the blades. In texture, the smoothie is closer to drinkable yogurt than clear juice. You can serve it with toast for breakfast; for more glasses, double the quantities and work in two batches if the jar is small. Keep it in the fridge and drink it the same day if possible, as the cream gradually settles. For a dairy version, replace the plant-based cream with 100 ml sweetened whipping cream with at least 30% fat; it contains milk.
Frequently asked questions
Can I use fresh fruit instead of frozen?
Yes, but the smoothie will be less cold. Add 4-5 ice cubes when you blend it.
What should I do if the smoothie turns out too thick?
Pour 30 ml still water into the blender jar and blend for another 5 seconds.
How can I reduce the raspberry seeds in the smoothie?
Pass it through a fine-mesh sieve, with a mesh size of about 1 mm, before pouring it into glasses.
Can I replace the honey with maple syrup?
Yes, use 3 tablespoons maple syrup instead of honey for the two servings.
How can I make the whipped cream firmer for decorating?
Leave the 100 ml plant-based cream in the fridge for another 20 minutes before whipping it.
