Homemade grilled burgers

Meat - Homemade grilled burgers by Celia J. - Recipia

Homemade grilled burgers are topped with beef patties, browned onion and chopped tomatoes with garlic. The buns also get pickles, cheese and a little mustard, while the tomatoes make the mixture juicy, with a taste of balsamic vinegar. For the beef, I choose mince with a little fat, not too lean. Preparation: 25 minutes. Cooking: 12 minutes. Resting: 20 minutes. Total time: 57 minutes. Servings: 8. About 700 kcal and 33 g protein per serving.

Ingredients

  • 1 kg ground beef
  • 2 medium onions (300 g)
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground pepper
  • 1 teaspoon sweet paprika
  • 1/4 teaspoon chili powder (optional)
  • 120 g sliced pickles
  • 2 medium tomatoes (300 g)
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon ground pepper
  • 2 garlic cloves
  • 160 g semi-hard cheese
  • 8 hamburger buns
  • 40 g mustard
  • 120 g ketchup (optional)
  • 120 g mayonnaise (optional)

Preparation

1. Put the ground beef on your work surface. Add one finely chopped onion, 1 teaspoon sea salt, 1/2 teaspoon pepper and the sweet paprika. Knead until the seasonings are spread through the meat. 2. Transfer the mixture to a bowl and leave it in the fridge for 20 minutes. 3. Slice the pickles. Dice the tomatoes and mix them with the olive oil, balsamic vinegar, 1/4 teaspoon salt, 1/8 teaspoon pepper and chopped garlic. 4. Cut the cheese into 8 not-too-thick slices. Cut the other onion into thin rings and grill them for 2 minutes on each side. Set aside. 5. Take the meat out of the fridge and divide it into 8 balls. Flatten them with your palm and score each patty with a knife. 6. Heat the grill well and cook the patties for about 4 minutes on each side, until browned and cooked through in the center. 7. Cut the buns open and spread them with mustard. Put a slice of onion, a patty, some pickles and a slice of cheese in each one. Add a spoonful of the tomato mixture; add ketchup and mayonnaise if you like.

Notes

You can use 8 gluten-free buns; regular ones contain gluten, the cheese contains dairy, and the mayonnaise contains egg. Store the cooked meat separately in the fridge for up to 3 days; keep the tomatoes aside and assemble the burgers before serving. For all 8 servings, have the buns and toppings ready before the meat goes on the grill; thicker patties may need more time. Kneading is the step I don't rush, so the salt and paprika don't end up concentrated in one spot. Serve the burgers with baked potatoes or green salad.

Frequently asked questions

What kind of beef is right for patties?

Ask for ground chuck with about 15-20% fat. Very lean mince can dry out on the grill.

How can I check if they're cooked through in the center?

A thermometer inserted into the middle of a patty should read 71°C. Check one of the thickest ones.

Can I replace the cheese with another kind?

Yes, you can put a slice of cheddar in each burger. It softens on the hot patty.
