Chicken and veal skewers

Chicken and Veal Skewers: A Delicious Recipe for Unforgettable Moments One of the most enjoyable and flavorful dishes we can prepare is skewers. This method of grilling meat and vegetables has become a favorite in many households, bringing friends and family together around a table full of flavor. Chicken and veal skewers are not only an excellent choice for a summer meal but also a perfect opportunity to enjoy the outdoors. Preparation time: 20 minutes Marinating time: minimum 3 hours (ideally overnight) Cooking time: 15 minutes Total: approx. 35 minutes Number of servings: 4 Necessary ingredients: - 250 g chicken breast (you can also use turkey or pork) - 250 g young veal - 1 red onion - 1 white onion - 1 large red bell pepper or 2 smaller ones - 1 yellow bell pepper - 12 small champignon mushrooms - 6 skewers For the marinade: - 1 tablespoon balsamic vinegar (or 100 ml white wine) - 1 tablespoon soy sauce - 1 tablespoon chili sauce - 1 teaspoon hot mustard - 2 teaspoons sweet mustard - 1/4 teaspoon sweet paprika - A pinch of ground pepper - 7 garlic cloves (or 1 teaspoon heaping of garlic powder) - No salt is needed, as the soy sauce is already salty. Step by step for a perfect recipe: 1. Marinating the meat: Start by preparing the marinade. Peel the garlic and crush it with the flat side of a knife. If necessary, chop it finely. In a small bowl, mix the garlic with the remaining marinade ingredients. Make sure all the flavors combine well. 2. Preparing the meat: Cut the chicken breast and veal into cubes about 2.5-3 cm. Ensure the meat is well drained before adding it to the marinade. Place the meat cubes in the bowl with the marinade and mix well to ensure all the meat is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 3 hours (ideally overnight for an intense flavor). 3. Preparing the vegetables: While the meat is marinating, cut the red and white onions into quarters, the bell peppers into pieces the size of the meat, and you can leave the mushrooms whole, removing only the stems. It is important that the vegetables are similar in size to the meat for even cooking. 4. Assembling the skewers: Once the meat has marinated, take it out of the refrigerator. On each skewer, alternate pieces of chicken and veal with the vegetables, without overcrowding. Leave a little space between the ingredients to allow air circulation and even cooking. 5. Cooking the skewers: Preheat the grill to medium heat. If you are using a water grill, there is no need to soak the skewers in water, but if you have a regular grill, it is recommended to soak them in cold water for 30 minutes to protect them from intense heat. Once the grill is well heated, brush the grates with butter or oil to prevent sticking. Place the skewers on the grill, arranging them in triangles. Cover with a lid (making sure it does not come into direct contact with the food) and let cook for 10 minutes. 6. Turning the skewers: After 10 minutes, turn the skewers and let them cook on the grill for another 5 minutes. It is essential not to have a high flame; otherwise, the vegetables will burn before the meat is cooked. 7. Finishing and serving: Once the skewers are cooked, you can sprinkle them with a little warm water in the last 5 minutes for a caramelized appearance and more appealing texture. Serve the skewers hot, alongside quick homemade flatbreads and a garlic yogurt sauce with salt and a little parsley. A fresh salad will perfectly complement the meal. Suggestions and variations: - You can experiment with different types of meat, such as turkey or pork, to change the flavor of the skewers. - Add a variety of vegetables, such as zucchini or squash, to diversify the flavors. - For an extra flavor boost, you can add spices like oregano or thyme to the marinade. Nutritional benefits: These skewers are an excellent source of protein and vitamins from vegetables. Chicken and veal are low in fat, while the vegetables provide a rich supply of vitamins and antioxidants. Calories: A serving of chicken and veal skewers contains approximately 300-350 calories, depending on the type of meat and vegetables chosen. Chicken and veal skewers are perfect for a gathering with friends or a family dinner. Their savory taste and appealing appearance will surely delight any meal.
