Grilled chicken skewers

Grilled chicken skewers are usually cooked on the grill and served hot, with pepper and red onion between the pieces of meat. The breast browns on the outside, while the vegetables soften slightly and develop dark edges. I cut the chicken breast into similarly sized cubes so they brown at about the same pace. Prep: 20 minutes. Cook: 12 minutes. Total time: 32 minutes. Serves: 2. Approximately 345 kcal and 56 g protein per serving.
Ingredients
- 2 chicken breasts (500 g)
- 1 medium bell pepper (150 g)
- 1 medium red onion (150 g)
- 1 teaspoon salt
- 8 skewers
Preparation
1. Pat the chicken breasts dry with paper towels and cut them into cubes about 3 cm in size. Cut the pepper and red onion into similarly sized pieces. 2. Thread a piece of chicken, a pepper cube and a red onion cube onto each skewer. Continue in the same order until the skewers are full. 3. Sprinkle 1 teaspoon of salt over the skewers on all sides. 4. Place them on a well-heated grill and cook for 12 minutes, turning them a few times. The chicken should be browned on the outside and opaque in the center.
Notes
Yellow onion can be used instead of red, and green pepper instead of red. I serve them with a simple salad and bread. They keep in a sealed container in the fridge for up to 3 days; the chicken breast dries out easily when reheated. Thick, evenly shaped breasts are easier to cut into more uniform cubes; thinner ones dry out faster on the grill. If the pepper has thick skin, cut the cubes a little smaller than the chicken ones, since they stay firmer on the grill.
Frequently asked questions
Can I use chicken thighs?
Yes, boneless thighs can be cut into cubes about 3 cm in size and grilled for about 14 minutes, turning them often.
How can I tell if the chicken is done?
The temperature should reach 74°C in the thickest part. Without a thermometer, cut into a cube and check that it is opaque all the way through, with no pink.
Why are they burning on the outside before they are done?
The flames may be touching the meat directly; move the skewers to a cooler spot and cook for another 2-3 minutes.
Can I use another vegetable instead of pepper?
Zucchini cut into 3 cm cubes can be threaded onto the skewers instead of pepper; it softens faster, so keep an eye on it toward the end of cooking.
