Triangles with cheese

These appetizers are simple, quick, and extremely tasty, perfect for a festive meal or a delicious snack between meals. The first essential step is to ensure that the dough we will use is well-thawed. It is best to let the dough thaw in the refrigerator overnight to avoid water condensation and achieve an optimal texture. Start by grating the cheese, preferably a type of telemea or feta cheese, which will give an intense and savory flavor to the dish. After grating the cheese, add an egg yolk and mix well until the composition becomes homogeneous. This cheese mixture will be the perfect filling for our triangles. Once the dough has thawed, roll it out gently on a clean surface, being careful not to roll it too thin to maintain a fluffy texture. Cut the dough into 9 equal squares to ensure even baking. On each square, add a teaspoon of the cheese mixture, placing the filling in the center of each shape. Then, brush the edges of the squares with beaten egg yolk to help seal them. Fold each square diagonally to form a triangle, and press the edges with a spoon or your fingers, ensuring they are well sealed so that the filling does not leak during baking. Place all the formed triangles on a baking tray lined with parchment paper, making sure to leave a little space between them, as they will puff up slightly during baking. For a more pleasant appearance and aroma, brush the triangles with another beaten egg yolk, which will give a beautiful golden hue. Preheat the oven to medium heat, and when ready, place the tray in the oven. Bake for about 20 minutes or until they become golden and crispy. You will notice how the aroma of the cheese blends with that of the baked dough, creating a delicacy that you won’t be able to resist. After removing them from the oven, let them cool slightly before serving, so you can fully enjoy the savory taste of these appetizers.
