Sour Cherry Compote

To prepare a delicious cherry preserve, the first step is to ensure that we have the necessary ingredients and utensils ready. We start by washing the cherries well, removing any impurities or leaves. These aromatic fruits, known for their sweet-sour taste, will add extra flavor to our pantry. We fill the jars with cherries, being careful to leave about half a jar free, as the fruits will compress during the preservation process. After arranging the cherries in jars, we proceed to add sugar. The amount of sugar can vary depending on individual preferences; usually, 4 tablespoons of sugar are recommended for a large jar and 2 tablespoons for a small one. It is important to use quality sugar to achieve an even and pleasant sweetness. After adding the sugar, we carefully pour boiling water over the cherries, ensuring they are completely covered. The boiling water helps dissolve the sugar and sterilize the fruits, preventing bacterial growth. After filling the jars, we tightly screw on the lids and gently shake them to ensure that the sugar does not remain at the bottom of the jar. This step is essential, as we want an even distribution of sugar in each jar. A recommended method for ensuring safe preservation is to place the jars upside down. A safer alternative is to place them on the oven rack. The oven should be preheated to 250 degrees Celsius. Once the temperature is appropriate, we introduce the jars, being careful not to overlap them to allow heat circulation. We close the oven door and leave the jars there for 10 minutes. This intense heat sterilization process helps preserve the cherries, and once the time has expired, we let the oven cool down gradually, along with the jars. This method not only guarantees effective preservation but also retains the natural flavors of the cherries, giving them a pleasant texture and intense taste. After everything has cooled down, we can store the jars in a cool, dark place, where they will be kept away from direct light and excessive heat.
