Shepherd's pie with smoked meat and Delaco cheese

Shepherd's pie with smoked meat and Delaco cheese has thick mashed potatoes to hold its layers in place. Between the layers of potato, I put pork hock, sausages and ham browned with onion, while tomatoes in tomato sauce bind the filling; in the oven, the cheese melts and browns lightly. I serve it up with a spoon while it’s still hot. Prep: 20 minutes. Cook: 45 minutes. Total time: 65 minutes. Serves: 4. About 760 kcal and 42 g protein per serving.
Ingredients
- 600 g potatoes
- 1500 ml water
- 200 g boneless smoked pork hock
- 1/2 teaspoon salt
- 200 g homemade smoked sausages
- 100 g ham
- 1 large onion (150 g)
- 15 ml oil
- 3 garlic cloves
- 100 g tomatoes in tomato sauce
- 1/2 teaspoon pepper
- 200 ml milk
- 50 g butter
- 150 g Delaco cheese
Preparation
1. Peel the potatoes, wash them and cut them into cubes. Put them in a pot with 1500 ml water, the smoked pork hock and 1/2 teaspoon salt. Boil for 20 minutes, until the potatoes are tender. 2. Cut up the sausages, ham and onion. Heat 15 ml oil in a pan and brown them for 8 minutes, until they change color. 3. Slice the garlic and add it to the pan with the tomatoes in tomato sauce and 1/2 teaspoon pepper. Simmer the mixture for 5 minutes, until it reduces a little. 4. Drain the potatoes and pork hock well. Cut the pork hock into small pieces, then mash the potatoes with 200 ml milk and 40 g butter. 5. Grease an ovenproof dish with 10 g butter. Add half the mashed potatoes, grate 75 g cheese over the top, then add half the smoked meat mixture. Cover with the rest of the mashed potatoes, then top with the remaining smoked meat and 75 g grated cheese. 6. Bake the pie for 12 minutes at 200°C, until the cheese melts.
Notes
You can replace the smoked meat with 500 g ground meat; you can use 150 g Parmesan instead of another cheese, but the butter, milk and cheese mean the dish still contains dairy. A simple green salad is enough on the side. Keep covered in the fridge for up to 3 days; reheat each serving in the oven. Starchy potatoes make a firmer mash, while waxy ones can leave it softer. Pork hock and sausages vary in saltiness, so taste the mixture before assembling.
Frequently asked questions
Can I use fresh sausages instead of smoked ones?
Yes. Brown them for 10-12 minutes, until they’re no longer raw in the middle, then add the onion.
Can I replace the tomatoes in tomato sauce with fresh tomatoes?
Use 100 g chopped fresh tomatoes and simmer for 7 minutes, until they soften and the liquid reduces.
What should I do if the tomato mixture is too runny?
Leave it on the heat for another 3 minutes, stirring, until some of the liquid evaporates.
How can I brown the cheese on top more?
Once it has melted, move the dish under the grill for 1-2 minutes and keep an eye on it so it doesn’t burn.
