Drob marmorat de ied, Romanian marbled goat loaf

Drob marmorat de ied is a Romanian marbled goat loaf that holds together well when the offal and meat are chopped very finely, with raw eggs binding the mixture. The slices have layers of meat and hard-boiled egg, topped with browned cheese; the center stays firm once cooled. I prefer to cut thicker slices so the egg doesn’t come apart. Preparation: 30 minutes. Cooking: 100 minutes. Resting: 60 minutes. Total time: 190 minutes. Serves: 6. Approximately 500 kcal and 51 g protein per serving.
Ingredients
- 400 g kid goat liver
- 200 g kid goat kidneys
- 400 g boneless kid goat leg
- 2000 ml water
- 5-6 bay leaves
- 2 bunches green onions (200 g)
- 2 bunches green garlic (100 g)
- 15 g dill
- 15 g parsley
- 4 raw eggs
- 4 eggs for boiling
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 5 ml oil
- 200 g semi-hard cheese
Preparation
1. Pat the liver, kidneys and meat dry with paper towels. Put them in a pot with 2000 ml water and 5-6 bay leaves. Bring the water to a boil, then simmer everything over low heat for 45 minutes, until a fork slips easily into the meat. 2. Drain the meat and offal well, then leave them to cool for 30 minutes. Chop them very finely. 3. Trim, wash and chop the green onions, green garlic, dill and parsley. Boil 4 eggs for 10 minutes, cool them, peel them and cut them lengthwise into quarters. 4. In a bowl, mix the chopped meat and offal with the herbs, 1 teaspoon salt, 1/2 teaspoon pepper and 4 raw eggs until the mixture holds together. 5. Line a loaf pan with baking paper and grease the paper with 5 ml oil. Add half the mixture, half the hard-boiled egg quarters, then a layer of meat, the remaining eggs and the rest of the mixture. 6. Bake in a preheated oven at 180°C for 30 minutes, until the mixture is set in the middle. 7. Grate 200 g cheese over the top and bake for another 15 minutes, until melted and lightly browned. 8. Leave the drob to cool for 30 minutes, then remove it from the pan and slice it.
Notes
I serve it with a simple green salad, without another heavy side. You can replace the cheese with 200 g grated aged cheese; the drob already contains dairy and eggs. Keep it covered in the fridge for up to 3 days, and you can bake it a day ahead. Choose fresh offal with no sour smell; remove the white center from the kidneys. If you want a clear stripe in the middle, leave the 4 hard-boiled eggs whole and arrange them lengthwise; cut into quarters, they spread across more slices. Chop the liver and kidneys finely so there are no large pieces in a slice.
Frequently asked questions
Can I replace the kid goat kidneys?
Yes, use 200 g boneless kid goat meat instead. The offal flavor will be less pronounced.
Which cut of kid goat should I choose?
Boneless shoulder works well here, cut into cubes of about 3 cm before boiling.
Can I use lamb offal?
Yes, replace the liver and kidneys with 400 g lamb liver and 200 g lamb kidneys. Boil them with the lamb until a fork slips easily into the meat.
If I have small eggs, how many should I use?
Use 5 small eggs for the mixture and 5 for the boiled-egg layer. The raw eggs help the mixture hold together.
