Diplomat Cake with Fruits

Gelatin dissolves in a small amount of cold water, being careful not to form lumps. After it has hydrated, it is carefully poured over the warm milk, constantly stirring to obtain a homogeneous mixture. The egg yolks are vigorously beaten with sugar until they become a fluffy, light-colored cream. The grated zest of the two oranges is added, which will provide an intense fragrance and a fresh aroma to the preparation, alongside vanilla sugar and vanilla essence, for an extra sweetness and flavor. Once the gelatin has perfectly integrated into the milk, this mixture is added to the beaten yolks, stirring continuously to avoid the coagulation of the eggs. This mixing is done over low heat, being careful not to exceed the temperature that could cook the eggs. It is stirred continuously until the mixture becomes thicker, similar to a pudding, after which it is removed from the heat and allowed to cool completely. Meanwhile, we take care of arranging the pan. A layer of fresh fruit is placed that will form the base of the cake; it is essential to choose them carefully, considering that they will be visible on the surface of the cake. The pan is moistened with cold water to facilitate the future cake's release. The remaining fruits are diced, preparing them to be integrated into the layers of the cake. The next step is to whip the cream until it becomes firm, but not excessively hard. This will be mixed with the cooled pudding mixture, resulting in a fine, airy cream. A layer of this mixture is placed in the pan, followed by a layer of fruit, then ladyfingers soaked in the pineapple compote syrup or, alternatively, in milk. Another layer of cream, fruit, and again ladyfingers is continued until all ingredients are used up. It is important to ensure that the layers are even to achieve an impressive cake. Once the cake is fully assembled, it is left in the refrigerator for about a day to set and allow the flavors to develop. The next day, the pan is gently moved to check if the cake has released, and if it does not budge, the pan can be gently warmed on the stove to facilitate the cake’s release. Once turned out onto a platter, the cake will reveal an attractive appearance, and its taste will be an explosion of flavors. It is an ideal dessert for any occasion, bringing a touch of joy to your table.

- 400 g of ladyfingers
- 1 kg of whipped cream
- 1 kg of kiwi
- 2 cans of pineapple compote (one with chunks and one with rings)
- 2 oranges
- 1 packet of vanilla sugar
- 2 vanilla essences
- syrup from the pineapple compote or milk for soaking the ladyfingers
