Lava cake

To prepare a delightful lava cake with blackberry sauce, we start by carefully washing the blackberries, draining them well to avoid diluting the sauce. In a saucepan, we place these delicious fruits along with the sugar, being careful to stir them gently so as not to crush them. We bring the mixture to medium heat and let it boil, stirring occasionally, until the blackberry juice combines with the sugar and the mixture thickens slightly, for about 10-15 minutes. Once we achieve a syrup-like consistency, we set the saucepan aside and let the sauce cool. Meanwhile, we take care of the chocolate. We take a heatproof bowl and break the chocolate into small pieces, adding the diced butter. We place the bowl over a double boiler, ensuring that the water does not touch the bottom of the chocolate bowl. We stir constantly with a silicone spatula until the chocolate and butter are completely melted, forming a smooth and glossy mixture. Once we remove the bowl from heat, we let it cool slightly before adding the powdered sugar, mixing well to avoid lumps. Next, we incorporate the eggs and yolks, ensuring they mix well into the mixture. After that, we sift the flour and add it gradually, stirring continuously to achieve a fine texture. Finally, we do not forget to add the vanilla essence, which will give an irresistible fragrance to our cake. Now, we are ready to bake the lava cakes. We take 6 muffin molds, preferably ceramic, which we grease with butter to prevent sticking. We evenly divide the chocolate mixture into the 6 molds, then carefully place them on a tray. We preheat the oven to 200 degrees Celsius and place the tray in the oven for 9-10 minutes. Meanwhile, we can prepare the plates. When the lava cakes are ready, we take them out of the oven and let them cool for 1-2 minutes. On a plate, we pour a thin layer of blackberry sauce, then carefully invert a lava cake over this sauce. To complete this decadent dessert, we add a scoop of vanilla ice cream and a few fresh currants for a contrast of textures and flavors. Enjoy every bite with pleasure!
