Cake with biscuit base and yogurt cream with whipped cream

To prepare a delicious and refined dessert, we will start by creating a crunchy base of breadcrumbs. In a generous bowl, we mix the breadcrumbs with melted butter, sugar, and vanilla sugar using a mixer. This combination will result in a crumbly composition that will form the base of our cake. Once we achieve the desired texture, we will take a tray that we will line with cling film, making sure that the film slightly exceeds the edges of the tray. With the back of a spoon, we evenly spread the breadcrumb mixture in the tray, pressing lightly to obtain a compact crust. After completing this step, we will refrigerate the tray, allowing the base to harden while we prepare the delicious cream. In another bowl, we will mix the yogurt with whipped cream, sugar, and cheese, obtaining a smooth and creamy mixture. Now, we will deal with the gelatin, which will provide stability to our cream. We dissolve the gelatin in 6 tablespoons of cold water and let it hydrate for 15 minutes. After this time has passed, we put it on low heat, stirring constantly, until the gelatin granules completely dissolve. It is important not to let the gelatin boil, as this will affect its gelling properties. Once the gelatin is completely dissolved, we take 2 tablespoons of the yogurt mixture and mix them with the gelatin to temper the temperature. Then, we pour the gelatin mixture into the yogurt cream and gently mix to prevent lumps from forming. Now is the time to add the fresh fruits. In our case, we have chosen bananas, which we will cut into small pieces and incorporate into the delicious cream. We take the tray with the base out of the fridge and pour the yogurt and fruit cream over the crust, spreading it evenly with a spatula. After completing this step, we put the tray back in the fridge, allowing the dessert to chill for 2-3 hours, so that the cream sets perfectly. After chilling, we will remove the cake from the tray, using the cling film to help us, and we will slice it according to our preferences. Each portion can be decorated with a dollop of whipped cream, adding an attractive look and extra flavor. This cake is not only a wonderful choice for dessert but also an excellent way to impress guests with a refined and tasty dish, perfect for any occasion.
