Ingredients for the cake (2 layers) - 6 eggs - 6 tablespoons sugar - 2 tablespoons water - 6 tablespoons flour - 3 tablespoons cocoa powder - 1 teaspoon baking powder - Rum essence (optional) Ingredients for the cream - 1 liter liquid cream - 4 packets cream stabilizer - 3 boxes mascarpone (250 g each) - 10 tablespoons sugar - 1 jar sour cherries Ingredients for decoration - Chocolate candies - 1 cake foil with a motorcycle (or any other desired theme) - 1 jar cherries from compote - Silver candies Step-by-Step Instructions 1. Preparing the Cake: Start by separating the egg whites from the yolks. Whip the 6 egg whites until stiff peaks form, then gradually add the sugar and continue mixing until you achieve a glossy meringue. In another bowl, mix the yolks with 2 tablespoons of water and rum essence (if using). Gently fold the yolk mixture into the egg white meringue using a spatula. 2. Adding Dry Ingredients: Sift the flour, cocoa powder, and baking powder together, then fold them into the egg mixture, being careful not to deflate the meringue. 3. Baking the Cake: Line a baking tray with parchment paper, pour in the mixture, and bake in a preheated oven at 160°C for 20-25 minutes. Check with a toothpick if the cake is done – if it comes out clean, the cake is ready. Let it cool completely on a wire rack. 4. Preparing the Cream: In a large bowl, whip the liquid cream together with the stabilizer and sugar until firm. In another bowl, mix the mascarpone for 2-3 minutes, then fold it into the whipped cream gently. 5. Assembling the Cake: Place the first layer on a platter. Soak it well with the syrup from the cherry compote, then spread half of the cream over the layer. Add the sour cherries, lightly crushed, and top with a little cream. Place the second layer, soak it the same way, and cover the cake with the remaining cream. 6. Decorating: Use the cake foil with the motorcycle to add a personal touch. Decorate the cake with chocolate candies and cherries from the compote. Make it shine with silver candies for a festive look. Practical Tips - You can replace the cherries with other canned fruits like peaches or pineapple to vary the flavor. - If you want a less sweet cake, reduce the amount of sugar in the cream. - Make sure the layers are completely cooled before assembling them to prevent the cream from melting. - This cake keeps well in the refrigerator, so you can prepare it a day before the party.
