To prepare these delicious coconut cookies, we will start by organizing the necessary ingredients and utensils. We need 375 grams of Rama margarine, 375 grams of vanilla-flavored powdered sugar, 6 egg yolks, 1 baking powder, and 700 grams of flour. We will also use the remaining egg whites, coconut for rolling, and our favorite jam for filling. In a large bowl, we will cream the margarine with the powdered sugar until we obtain a creamy, fluffy mixture that has a light color. This process will take a few minutes, and the final result will be an airy mixture that will contribute to the fine texture of the cookies. After we have obtained this foam, we add the 6 egg yolks, mixing well until fully incorporated. The next step is to add the baking powder and flour. It is important to sift the flour to avoid lumps and ensure uniformity of the dough. After adding the flour, we mix with a spatula or by hand until we obtain a homogeneous dough that easily pulls away from the sides of the bowl. From this amount of dough, we can form balls of the desired size, making sure to make them similar in size for even baking. From the mentioned ingredients, I obtained 48 balls. To prepare the balls for baking, we will take the remaining egg whites and lightly beat them with a fork, just enough to separate. On a flat plate, we put the coconut. Each ball will be dipped in the beaten egg white, then generously rolled in coconut, ensuring it is covered on all sides. If desired, we can also use ground walnuts or ground almonds to diversify the flavor. We prepare the baking tray by placing aluminum foil or parchment paper, then arrange the balls, leaving space between them. Each ball will be gently pressed in the middle with a finger to create a dent, where we will add the jam after baking. We put the tray in the preheated oven on low heat and bake the cookies for 20-25 minutes, until they turn slightly golden. It is essential to check them, as each oven bakes differently. After removing them from the oven, we let them cool slightly, then fill the dents with the chosen jam, whether it is apricot, raspberry, or any other preferred flavor. The cookies are excellent if we let them rest overnight, as the flavors intensify and become much tastier. These coconut cookies represent not only a delicious dessert but also a way to bring joy to the hearts of loved ones. Enjoy them with pleasure!
