Watermelon Jelly

For this delicious recipe, we start by preparing the necessary ingredients and utensils. First, the gelatin sheets are soaked in cold water, making sure to leave them there for about 10-15 minutes until they become soft and flexible. This is an essential step as the gelatin will be responsible for providing consistency and stability to our dessert. In the meantime, we take a fresh, juicy, and well-ripened watermelon. We peel it, making sure to also remove the black seeds to avoid affecting the final texture of the preparation. Once the watermelon is peeled, we cut it into small pieces and put it in a blender. We blend vigorously until we obtain a fine puree. It is important to ensure that we get about 800 ml of juice, so we use a weighing bowl to check the volume. After obtaining the juice, it is time to strain it through a fine sieve or cheesecloth to eliminate the pulp. This way, we will obtain 700 ml of pure watermelon juice, ready to be transformed into something delicious. Now, we pour the juice into a pot and add the sugar, stirring gently. We set the heat to low and let it warm for 5-7 minutes, being careful not to allow the mixture to boil. It is essential for the sugar to dissolve completely without creating boiling bubbles. Once the sugar has dissolved, we add the gelatin sheets and continuously stir until they completely melt, integrating into the watermelon juice. It is recommended to let the mixture cool slightly so that it is not too hot when we pour it into glasses or molds. The choice of containers depends on everyone's preferences, whether we opt for elegant glasses or various molds. After pouring the mixture, we cover the glasses or molds with plastic wrap to prevent a crust from forming. Now, we place them in the refrigerator and let them cool and set for at least 4 hours. This is the perfect time to relax and think about how we will serve this refreshing dessert. Once the time has passed, we can carefully remove the dessert from the molds and decorate it with slices of watermelon or fresh mint. Enjoy your meal!
