Strawberry jelly with vanilla cream

Strawberry jelly with vanilla cream is layered in small cups over petit beurre biscuits and peaches. Once chilled, the layers set, and the fruit stays between the vanilla cream and jelly. I serve it in clear cups so you can see the layers. Prep: 15 minutes. Cook: 5 minutes. Chill: 2 hours and 20 minutes. Total time: 2 hours and 40 minutes. Servings: 10. Approximately 160 kcal and 3 g protein per serving.
Ingredients
- 10 petit beurre biscuits
- 1 packet vanilla pudding mix
- 500 ml milk
- 1 packet instant strawberry jelly
- 500 ml water
- 2 peaches
Preparation
1. Put a petit beurre biscuit in each of the 10 small containers. 2. Make the vanilla pudding with 500 ml milk, following the package directions. Cook for 3 minutes, stirring, until thickened. 3. Make the instant strawberry jelly with 500 ml water, following the package directions. Stir for 2 minutes, until the granules dissolve. 4. Cut the peaches into small cubes. 5. Spoon a tablespoon of pudding over each biscuit, add the peach pieces, then pour the strawberry jelly over the top. 6. Leave the cups to cool for 20 minutes, then put the lids on and refrigerate for 2 hours.
Notes
You can make them a day ahead and keep them covered in the fridge for up to 3 days. You can replace the peaches with 200 g strawberries. For a gluten-free version, choose 10 gluten-free petit beurre biscuits; regular biscuits contain gluten, and pudding made with milk contains dairy. Ripe but still firm peaches hold their shape better when cut. If the fruit is very juicy, leave the cubes to drain before putting them in the cups. If the jelly is still hot when you pour it in, it can thin the cream and mix the layers. I serve them with black tea.
Frequently asked questions
Why does the jelly stay soft?
Leave the cups in the fridge for another 60 minutes. If it still doesn't set, check that you used the amount of water specified on the packet.
Can I use canned peaches?
Yes, use 150 g well-drained peaches and pat them dry with paper towel before cutting.
How can I make the vanilla cream firmer?
Make it with 450 ml milk instead of 500 ml; the cream will be thicker once chilled.
