The first step is to beat the eggs with the sugar, using a mixer or a whisk, until the mixture becomes frothy and doubles in volume. This step is essential to achieve a fluffy texture of the sponge cake. Then, gradually add the oil, continuing to mix well, so that all the ingredients are perfectly combined. In a separate bowl, combine the flour with the baking powder. This will help the dough rise during baking. Add the flour mixture to the egg and sugar mixture, alternating with the milk. It is important to mix gently, so as not to lose the air in the mixture. The consistency of the dough should be slightly thicker than that of pancake batter, so that it flows easily off the spoon, but has a sufficiently consistent texture. Prepare a baking tray by greasing it with butter and sprinkling flour to prevent sticking. Pour half of the batter into the tray and place it in the preheated oven at 180°C for about 10-12 minutes, until the dough begins to set slightly.
