Vegan mineral water crepes have a slightly thicker batter, with no eggs, and are cooked in a pan until golden. Orange zest gives them a subtle aroma, and you can serve them plain or filled. I weigh the flour instead of measuring it by the cup. Prep: 10 minutes. Cook: 48 minutes. Total time: 58 minutes. Servings: 8. About 345 kcal and 7 g protein per serving.

Ingredients

  • 500 g flour
  • 10 g baking powder
  • 3 tbsp sugar
  • 1/4 tsp salt
  • 5 g orange zest
  • 100 ml oil
  • 750 ml mineral water

Preparation

1. In a bowl, mix the flour, sugar, salt, orange zest and baking powder. Make a well and pour 80 ml of oil into it. 2. Gradually add the mineral water, stirring until you have a smooth batter, a little thicker than batter made with eggs. 3. Heat a pan well and grease it with oil from the 20 ml left over. Pour in the batter and cook each crepe for 1-2 minutes on each side, until golden; allow about 48 minutes for all the batter.

Notes

Serve them plain, with jam or with a sweet filling. Any leftovers keep covered in the fridge for up to 3 days; briefly reheating them in a pan softens them again. Using sparkling mineral water straight after opening makes the batter airier, and the fine bubbles mix in easily. If the pan is too hot, the edges brown before the middle sets, so lower the heat after the first one. Whole wheat flour absorbs more water and thickens the batter; the crepes contain gluten.
