Honey French toast

Ingredients
- 4 large farm eggs
- 50 ml milk
- 1 white baguette
- 1/4 teaspoon salt
- 100 ml oil
- 4 tablespoons honey
Preparation
1. Cut the baguette into 1 cm rounds. This takes about 10 minutes. 2. Beat the eggs with 1/4 teaspoon of salt and the milk until well combined. 3. Pour 100 ml of oil into a frying pan and heat it for 2 minutes over medium heat, until it shimmers. 4. Dip the rounds in the beaten egg and fry in batches for 2 minutes on each side, about 16 minutes in total, until golden. Transfer them to paper towels, then serve with the honey.

Serve a few slices of apple or pear alongside; fresh fruit rounds out breakfast without any extra prep. For a dairy-free version, replace the 50 ml of milk with 50 ml of unsweetened soy drink. A day-old baguette, with its crust still firm, is easier to slice and holds its shape well in the egg. If you only have fresh bread, leave the rounds on a cutting board for 20 minutes before dipping them in the mixture. Baguette contains gluten, and eggs and milk are allergens. I beat the eggs when the pan is almost hot, so the French toast is warm when it reaches the table. It’s similar to regular eggy bread, but baguette rounds are smaller and easy to pick up by hand.
