Bircher muesli with honey, coconut and pistachios

Bircher muesli with honey, coconut and pistachios is usually served for breakfast, after a night in the fridge, when the oats have softened and the mixture has turned creamy. The apples and raisins stay in the mix, while the yogurt and pistachios go in just before serving. I like to keep it fairly thick and sprinkle the pistachios on at the last minute. Prep: 15 minutes. Cook: 0 minutes. Rest: 8 hours. Total time: 8 hours and 15 minutes. Servings: 4. Approximately 530 kcal and 18 g protein per serving.
Ingredients
- 180 g oats
- 2 small green apples
- 1/2 teaspoon cinnamon
- 625 ml milk (or plant-based milk)
- 2 tablespoons honey
- 40 g coconut flakes
- 70 g raisins
To serve
- 200 g yogurt
- 35 g chopped pistachios
- 20 g honeycomb (optional)
Preparation
1. Grate the green apples and put them in a bowl with the oats, cinnamon, milk, honey, coconut flakes and raisins. Stir everything for 15 minutes, until the honey is mixed in. 2. Cover the bowl and leave it in the fridge overnight, for at least 8 hours. The oats soften and the mixture thickens. 3. Divide the muesli into portions. Add the yogurt, chopped pistachios and, if you like, the honeycomb.
Notes
Keep covered in the fridge for up to 3 days; after the first night, the oats absorb more milk and thicken. Choose firm green apples that are easy to grate, and large oats if you want to keep some texture; very juicy apples make the mixture softer. If you prefer it looser in the morning, stir it before serving. I serve it with a mug of black tea. For a dairy-free version, use 625 ml plant-based milk and 200 g plant-based yogurt; the regular version contains dairy and pistachios.
Frequently asked questions
Why was it too thick in the morning?
Stir in 30 ml milk before serving; the oats absorb liquid even after chilling.
Can I use quick oats?
Yes, keep the amount at 180 g and check the texture after 6 hours in the fridge; they soften faster than large oats.
What can I use instead of raisins?
Use 70 g dried cranberries in their place. If they are sweetened, the muesli will taste sweeter.
