Tartino cheese and ham bruschetta

Tartino cheese and ham bruschetta has baguette slices toasted for 5-7 minutes. The cheese spread is easy to spread, and the ham, sun-dried tomatoes and cucumber can be divided among the slices. I arrange them on a small platter in a single layer, so it’s easy to pick up each slice. Prep: 15 minutes. Cook: 7 minutes. Total time: 22 minutes. Servings: 4. About 390 kcal and 22 g protein per serving.
Ingredients
- 1 baguette (250 g)
- 300 g cottage cheese
- 3 level tablespoons (30 g) grated cheese
- 1 tube (100 g) plain Tartino cheese
- 30 g sun-dried tomatoes
- 1 medium cucumber (250 g)
- 6 slices Black Forest ham
Preparation
1. Preheat the oven to 180°C. Slice the baguette and arrange the slices on a baking tray. 2. Toast the slices for 5-7 minutes, until lightly browned. 3. Mix the cottage cheese with the grated cheese and Tartino cheese until smooth. 4. Spread the mixture over the baguette slices. Cut the cucumber and sun-dried tomatoes into pieces, then arrange them on top with little pieces of ham, on their own or in combinations.
Notes
For a gluten-free version, use 250 g gluten-free baguette; the cheeses contain dairy, and regular bread contains gluten. Drain sun-dried tomatoes packed in oil and pat them dry before cutting, otherwise they leave oil on the surface of the spread. Choose a firm cucumber; if it has large, watery seeds, scoop out the center before cutting it so it doesn’t make the bread soggy. Baguette slices about 1 cm thick hold the spread well, while thinner ones soften faster. Very wet cottage cheese can be left in a sieve for a few minutes, then mixed with the other cheeses. The spread can be made ahead and kept covered in the fridge for up to 3 days; assembled bruschetta won’t stay crisp. I keep the cucumber separate until serving, especially if I’m putting the platter together earlier. Serve them with a simple green salad and sparkling water.
Frequently asked questions
How can I make the spread smoother?
Pass the cottage cheese through a fine-mesh sieve twice before mixing it with the other cheeses.
What ham can I use if I can’t find Black Forest ham?
Replace the 6 slices with 6 slices of cooked ham, cut into wide strips.
Can I toast the slices in a toaster?
Yes, toast them on the medium setting for about 2 minutes per batch.
Can I use fresh tomatoes instead of sun-dried ones?
Yes, cut 80 g cherry tomatoes into quarters and use them immediately after cutting.
