Once you have the dough, sprinkle a little flour on a clean surface and on the dough. Form a ball from the dough and wrap it well in plastic wrap. Place the dough in the refrigerator for about 30 minutes, during which the flavors will intensify. Meanwhile, we take care of the coulis. In the same blender, add 250 g of fresh strawberries, 40 g of powdered sugar, and pulse until you get a smooth and homogeneous paste. After finishing, strain the mixture through a sieve to remove the seeds, then cover it with plastic wrap and let it chill. In a small bowl, combine the juice and zest of one orange and one lemon, adding 40 g of powdered sugar. In another bowl, whip the cream until it forms soft peaks. Then, add the citrus mixture and continue to whip until the cream becomes firm and glossy. Cover this bowl as well and place it in the refrigerator. Preheat the oven to 200 degrees Celsius (or gas mark 6). Remove the dough from the refrigerator and, on a floured surface, carefully roll it out to a thickness of about 0.5 cm. Using your favorite cookie cutters, cut out the dough and transfer it to a baking sheet lined with parchment paper. Bake the cookies for 6-8 minutes or until they turn slightly golden. After baking, let them cool completely. To assemble the dessert, place a generous portion of whipped cream, slices of strawberries, and coulis on each cookie. If you want a more elegant presentation, arrange the slices of strawberries upright around the edge of the cookie. Alternatively, you can take another cookie, place it on top, adding a little whipped cream between them. For a special touch, place the coulis on the plate next to the cookies, garnish with fresh mint leaves, and sprinkle powdered sugar on top.
